Chocolate chia pudding

I want to share a dessert that is not only super fast and easy to make, but is also healthy and fairly low in calories as well. This chocolate chia pudding only takes a couple of minutes to put together and it is full of two of my favourite superfoods – chia seeds and cacao. Ingredients – 1 large serving, as pictured:
2 decilitre milk
2 1/2  tablespoons chia seeds
1 tablespoon cacao powder
1/2 – 1 teaspoon pure vanilla powder
1/2 – 1 tablespoon acacia honey (or your sweetener of choice)
A square of dark chocolate, grated (I used 70%)

  1. Simply add all of the ingredients to a bowl and whisk until everything is well combined.
  2. Chia seeds can absorb up to 12 times their own weight in liquid, so don’t worry about the mixture being really thin – it won’t be after a couple of hours in the fridge. I would recommend that you let it sit in the fridge for at least 3 hours before serving, to allow to the chia seeds to soak up the milk, but the best thing is actually to prepare it the night before.
  3. Before you put the pudding in the fridge I recommend that you taste it so you can adjust the flavour to your liking – you might want to add more cacao powder or sweetener etc.
  4. Before serving; stir the pudding well and adjust the thickness if necessary (add more chia if it’s too thin and more milk if it’s too thick). I served the pudding with some grated dark chocolate and fresh strawberries. Enjoy!
