Salad with spicy sweet potato, spicy falafels and guacamole
I’m sorry about the lack of updates and frequent use of pictures already posted on instagram, but I have exams at the moment (until the 13th of june) so unfortunately I do not have much time for the blog, but I will try my best to update it whenever I have a little extra time :)
This is my lunch from a while back, I love to eat big salads in order to get my daily greens and veggies, but personally salads do not keep me full for very long, so I always try to add something extra to make sure I stay full until my next meal. This salad contains three of my favorite things to eat at the moment; spicy sweet potato, spicy falafel and guacamole.
Spicy sweet potato
You can find my recipe for spicy sweet potato right here – this recipe is for sweet potato fries, but just chop them in squares instead and adjust the baking time.
The falafels pictured are actually store-bought organic falafels from Nutana, I can definitely recommend them for those times where you do not have the time to make your own. If you however do have the time to make your own I have posted a recipe for spicy falafels right here.
For the guac I just mashed an avocado with a little lemon juice, garlic powder, chopped spring onions, salt + pepper and a little chili flakes, so good!
