Chocolate mini pancakes with homemade chocolate sauce, sliced banana and fresh strawberries
This is one of those desserts that looks like it is super naughty – aka. full of sugar, fat, calories etc. – but actually really isn’t at all! Don’t get me wrong, I love eating naughty desserts as much as the next one, but I do try eat healthy most of the time (haha the key word here is try ;)), which is why this dessert is perfect – it satisfies the cravings and my sweet tooth, but is actually made of all healthy ingredients!
Ingredients, 2 servings:
2 deciliter oats
2 tablespoons skyr/greek yoghurt
1.5 – 2 tablespoon raw cacao
1/2 – 1 teaspoon cinnamon
1/4 teaspoon bakingpowder
A square of dark chocolate, grated (preferably 70% cacao or more)
Coconut oil to cook the pancakes in
- Add all the ingredients to a blender or food processor (except the chocolate) and pulse until smooth. Add the grated dark chocolate to the pancake batter.
- Heat a non-stick pan – I prefer to make them on high heat – and add a little coconut oil. When the oil has melted pour a circle of the pancake batter onto the pan, I used about 2 tablespoons per pancake
- Cook the pancake for about a minute or two until it is golden brown on the underside – flip it – and give it about a minute on the other side. The cooking time depends on how thick you make your pancakes
- I served the pancakes with sliced banana, chocolate sauce (Simply mix 1 tablespoon melted coconut oil, 1 tablespoon cacao powder and 1/2 tablespoon honey or agave), chopped dark 70% chocolate and fresh strawberries, so good!
