Homemade peach/raspberry ice tea
The weather here in Denmark has been absolutely amazing these past few weeks, which has inspired this summery peach/raspberry ice tea. It is important to stay hydrated in the summer heat and the best thing you can do is to drink lots and lots of water, but admittedly it can get a bit boring at times so I love to switch it up with smoothies, freshly pressed juices and now homemade ice tea!
750 ml water
3 tea bags
½ cup raspberries
3 tablespoons akacie honey or agave sirup
a little liquid stevia (optional)

- Boil the water and let the tea bags draw for about 5 minutes or the recommended brewing time of your tea of choice. Remove the teabags and put the tea aside to let it cool.
- Blend the peaches, raspberries, honey and 150 ml water, pulse until smooth and then use a nut milk cloth (or cheesecloth or something similar) to strain the pulp.
- Mix the tea and the peach/raspberry mixture well (I used a whisk), pour into a bottle and let it cool in the fridge for a couple of hours before serving. If you prefer a sweeter taste you can add a little stevia.
- I served it with lots of ice, sliced peaches, frozen raspberries and mint leaves, enjoy!
