Fruit and herb infused ice cubes

The weather here in Danmark is crazy warm these days and have been so for a while now, us Danes are not really used to having such amazing weather for this long and even though I absolutely love it and definitely appreciate it then I must admit that I am having a hard time adjusting to these high temperatures. I am feeling so sluggish and lazy and all I want to eat is fruit and ice-cream so I have not exactly been very creative in the kitchen these days. Instead I wanted to share this little tip with you – I already shared this on instagram, but never got around to posting on here – these fruit and herb infused ice cubes are perfect in this crazy heatwave, I have been adding them to everything!

Infused ice cubes are super easy to make, all you have to do is fill an ice cube tray with whatever fruit and herbs you’d like, top it with water and then place them in the freezer for a couple of hours. Personally I love adding lemon slices, lime slices and mint leaves because it gives the water such a nice and fresh taste when the ice have melted.

Berries are amazing to add as well because while they might not add much flavor, they give the water the most amazing color when the ice melts – so cute and festive! I definitely need to add these to the drinks for our next girls night, they might even be able to make our simple G&T’s seem all fancy ;)
