Healthy lunch box ideas pt. 2

The first post in this series of healthy lunch box ideas were one of the most popular on the blog (you can find it here!), so I thought it was about time to bring you part two as promised!

I only rarely bring lunch with me, but when I do I prefer to make it the night before to save time – this lunch is perfect for that as you can easily make the salad the night before (I would recommend adding the strawberries and the dressing in the morning though) and the chocolate hazelnut “nutella” balls can be made beforehand as well – you can even make a large batch and keep them in the freezer so you’re always well prepared.

Strawberry/asparagus summer pasta salad with pesto dressing – ingredients:
3 green asparagus, chopped
1 cup spinach, packed
1/4 cucumber, chopped
10 small strawberries, chopped
2 tablespoons pimpkin seeds
1 tablespoon pine nuts
75 g. whole wheat pasta, boiled

Dressing:
2 teaspoons basil pesto
2 teaspoons skyr/greek yoghurt
1/2 teaspoon acacia honey
Juice from 1/2 a lime
