Summer salad with peach, prosciutto and homemade honey/mustard dressing
I have been on a mission to make the most use of my parents garden while staying with them and you have something to look forward to because I definitely think some of the things I have made so far turned out really good! Haha I feel a bit douchey for saying that about my own cooking, but my family really liked it as well so you won’t just have to take my word for it ;) I will share the recipes with you as soon as I have had the time to edit the pictures. Until then I want to share this easy summer salad with you, it is inspired by this salad from Cookie Monster Cooking and it is made with spinach and yellow and orange carrots from my parents garden – is there anything better than homegrown produce? :D
For the salad:
Iceberg, spinach, cucumber, yellow and orange carrot, peach, prosciutto ham, avocado, chia seeds, sunflowerseeds.
For the dressing:
1 tblsp dijon mustard
2 tblsp honey
2 tbsp skyr/greek yoghurt
1 tbsp lemon juice
Salt and pepper to taste
I have intentionally not written the amounts for the salad (haha partly because I forgot keep track of how much I used) as you should just make the salad as big or little as you would like :) The dressing is one that I make really often, but I rarely use the exact same amounts since it really depends on what kind of mustard and honey I use, so I would recommend you to taste it and adjust it to your liking – you can also try the dressing recipe from the post the salad was inspired by, find it here.
