Beet and goat cheese fall salad

The weather has finally shifted and it almost feels like we went directly from a crazy summer heatwave and then straight to fall, the weather has been cold and moody all weekend and I absolutely love it! I have never been much of a fall person, but I think that is about to change, this weekend I have cosied up on the couch with blankets, tea, a good book and a little NCIS LA marathon on tv and it has been absolute perfection! As long as it does not get too cold I think I am starting to understand why people love fall so much.

Haha but enough of all this weather and season talk, the change in weather put me in the mood for this beet and goat cheese fall salad made with beets from my parents garden – how cute are those candy striped beets? I would usually make this as a side salad, but I have been recipe testing healthy treats all weekend so I had this for dinner on its own since I might have eaten a little too much of the treats I have been making – haha but I had to make sure that they were good enough to share with you guys right?!

Mixed Salad
Beets, raw and thinly sliced
Goat cheese
Pumpkin seeds

2 tbsp. balsamic vinegar
2 tbsp. acacia honey
