Berry vanilla chia jam
150 g. berries – I used a mix of red and black currants and blueberries
1 dl water
3 tbsp. chia seeds (buy it right here or here, affiliate links)
1 tsp. pure vanilla powder
Sweetener of choice – I used a little stevia and acacia honey (if vegan, use agave instead)
- Blend the berries and the water, I just gave them a quick blend so there was still some texture left and then I mixed in the rest of the ingredients.
- Put the mixture in a glass jar or container of choice (scald the glass with hot water first) and leave it in the fridge for at least a couple of hours to allow the chia seeds to soak up the liquid and let the mixture thicken.
