Berry vanilla chia jam

I cannot recommend this chia jam recipe enough, it only takes 5 minutes to make (needs a couple hours in the fridge though), it is super healthy and it is so tasty and versatile – I love to add it to pretty much everything! You can use whatever berries you like and have available, this time I made it with homegrown black currants, red currants and blueberries from my parents garden and it turned out so good – sweet and with a subtle taste of vanilla, but still a little sour as well.

150 g. berries – I used a mix of red and black currants and blueberries
1 dl water
3 tbsp. chia seeds (buy it right here or here, affiliate links)
1 tsp. pure vanilla powder
Sweetener of choice – I used a little stevia and acacia honey (if vegan, use agave instead)

  1. Blend the berries and the water, I just gave them a quick blend so there was still some texture left and then I mixed in the rest of the ingredients.
  2. Put the mixture in a glass jar or container of choice (scald the glass with hot water first) and leave it in the fridge for at least a couple of hours to allow the chia seeds to soak up the liquid and let the mixture thicken.
  3. I love to serve my chia jam on bread, on pancakes, as a layer in parfaits, add it to my smoothies for extra flavor and texture, mix it with skyr/greek yoghurt and so much more, enjoy!
