Strawberry caprese bruschetta

Peachy chia pudding

Chia pudding:
1 deciliter (about 0.4 cup) milk – I used oat milk
1 1/2 deciliter (about 0.6 cup) plain skyr/greek yoghurt
2 tablespoons chia seeds (buy them right here or here, affiliate links)
1/2 tsp. pure vanilla powder
Sweetener of choice, I used liquid stevia and a little acacia honey

1 frozen banana
1 peach
1-2 handfulls pineapple
1/2 – 1 tsp. baobab powder – optional

Chopped peach to top it with

Simply mix all the ingredients for the chia pudding and let it sit in the fridge overnight or at least for a couple of hours to allow the chia seeds to soak up the liquid and let the mixture thicken. You might need to stir it a couple of times while it sits in the fridge. Then blend the smoothie ingredients and pour it onto the chia pudding and top it with the chopped peach, enjoy!
