Chocolate covered coconut bites

I have been wanting to make these little chocolate covered coconut bites for a while now and I kept seeing so many different variations of these everywhere, so I thought it was about time that I finally gave them a try. They taste a bit like bounty bars, only a lot healthier of course, but also a lot messier – haha my entire kitchen is pretty much covered in chocolate right now, I seriously cannot make anything without leaving my kitchen a total mess!

Oh and that is chocolate underneath my fingernails, not dirt! Haha I even have chocolate in my hair!!

Coconut filling:
1 cup desiccated coconut
1/4 cup coconut oil, melted
1/3 teaspoon pure vanilla powder
1 teaspoon acacia honey/agave

Raw chocolate coating:
100 g. raw cacao butter
6 tbsp. raw cacao powder
1 tbsp. organic coconut oil
Sweetener of choice, agave, honey, coconut sugar etc.

  1. Start by making the coconut filling – simply add all the ingredients to a food processor and pulse until everything is well mixed, but make sure to leave some texture. Roll the coconut mixture into small balls and put them in a container lined with baking paper and place them in the freezer.
  2. While the coconut filling sits in the freezer you can start to prepare the chocolate. Add the cacao butter and coconut oil to a bowl and place it in a water bath to let it melt slowly. 
Once melted add raw cacao powder and mix well – I used a whisk to make sure it is properly mixed. Add your sweetener of choice, taste, and add more if you prefer a sweeter taste.
  3. Take the coconut filling out of the freezer and use a fork to dip the balls into chocolate mix (I dipped it several times to get a thick coating), add toppings if you like and place them in the fridge again to set.
