Acai chia pudding

Fall is here and winter is coming (any GOT fans out there? ;)), which means that it is not only getting colder, but also darker which is not exactly a big motivator to get out of bed in the morning. I find myself pushing the snooze button a little extra in fall and specially during winter, which leaves me with very little time to prepare a proper breakfast. This is where this acai chia pudding comes in, it is so easy and quick to make + it is perfect for those mornings when you are in a hurry since it can be prepared the night before. Besides getting a big plus for convenience this breakfast pudding also scores top points for its nutritional value, combining two of my absolute favorite super foods – chia seeds and acai. Ingredients:
1 cup almond milk
3 tablespoons chia seeds (get it right here or here, affiliate links)
1.5 tablespoon acai powder (buy it here or here. Affiliate links)
1/2 teaspoon pure vanilla powder
Sweetener of choice – liquid stevia, acacia honey, agave sirup etc.

Toppings: 1 banana and a handful blueberries

Directions:

  1. Simply mix all the ingredients well and let it sit in the fridge overnight to allow the chia seeds to expand and soak up the liquid.
  2. In the morning stir the chia pudding well and top it with sliced banana and a handful fresh blueberries – you can add these the night before if you are in a hurry in the morning.
  3. Enjoy!
