Acai chia pudding
Fall is here and winter is coming (any GOT fans out there? ;)), which means that it is not only getting colder, but also darker which is not exactly a big motivator to get out of bed in the morning. I find myself pushing the snooze button a little extra in fall and specially during winter, which leaves me with very little time to prepare a proper breakfast. This is where this acai chia pudding comes in, it is so easy and quick to make + it is perfect for those mornings when you are in a hurry since it can be prepared the night before. Besides getting a big plus for convenience this breakfast pudding also scores top points for its nutritional value, combining two of my absolute favorite super foods – chia seeds and acai. 1 cup almond milk
3 tablespoons chia seeds (get it right here or here, affiliate links)
1.5 tablespoon acai powder (buy it here or here. Affiliate links)
1/2 teaspoon pure vanilla powder
Sweetener of choice – liquid stevia, acacia honey, agave sirup etc.
Toppings: 1 banana and a handful blueberries
- Simply mix all the ingredients well and let it sit in the fridge overnight to allow the chia seeds to expand and soak up the liquid.
- In the morning stir the chia pudding well and top it with sliced banana and a handful fresh blueberries – you can add these the night before if you are in a hurry in the morning.
