Acai cashew bites with coconut and lime

Acai is one of my favorite superfoods, but I actually rarely use this antioxidant rich berry for much else than smoothies and acai bowls, so this week I have made it my mission to find new ways to put this amazing superfood to use. I have already made an acai chia pudding – find the recipe right here – and now these tasty and nourishing little acai bites. A while back I pinned this amazing recipe for raw maqui cashew lime bites by My Darling Lemon Thyme and I just knew that I had to try making my own version with acai.

Ingredients:
1 cup raw cashews
2 tablespoons acai powder (buy it here or here. Affiliate links)
1/2 cup shredded coconut
2 tablespoons coconut oil, melted
1 tablespoon acacia honey (or maple sirup or agave)
1 lime, both juice and finely grated zest

Optional: I used a mix of freeze-dried blackberry and raspberry to give the acai bites a pretty pink/red color and an extra flavor boost.

Directions:

  1. Start by adding the cashews, shredded coconut and acai powder to a food processor and pulse until the mixture has turned into a fine meal.
  2. Pour the mixture into a bowl and add the rest of the ingredients. Stir until everything is well combined and roll the mixture into small balls. If you want to add the berry coating then simply roll the acai bites in the freeze-dried berries – you can give the berries a quick blend in the food processor to turn them into a fine meal. 
  3. Put the acai bites in a lidded container lined with baking paper and place them in the freezer for at least 20 minutes before serving, enjoy!
