Healthy lunch box ideas pt. 3
I know I promised to bring you another `Healthy lunch box´ post ages ago, but I must admit that I completely forgot all about it. I am really sorry about that, but better late than never right? `Healthy lunch box ideas´ are, as the name reveals, dedicated to healthy lunches you can bring with you to school, uni, work or wherever you enjoy your lunch. To make it as easy as possible everything can be prepared the night before and some of it can even be prepared on the weekends to be used throughout the week. I hope you enjoy the post and I promise I will try not to take as long to post part 4 ;)
Rainbow salad with brown rice and pesto dressing
For the salad I simply mixed a bit of everything I had in the fridge: spinach, arugula, romaine salad, cucumber, carrot, avocado, mango, pomegranate, pumpkin seeds, sunflower seeds, brown rice and homemade pesto dressing. I usually cook a big batch of brown rice or quinoa on sundays to use in my salads during the week, this way you save a lot of time and always have something on hand for your lunches. Oh and if you use avocado then you can drizzle it with a little lemon to avoid it getting brown and spotty.
2 teaspoons basil pesto
2 teaspoons skyr/greek yoghurt
1/2 teaspoon acacia honey
Juice from 1/2 a lime
