Avocado grilled sandwich with basil, feta, spinach and balsamic vinegar

This avocado grilled sandwich is one of my newest snack obsessions, it contains three of my absolute favorite foods; bread, feta and avocado, seriously it does not get much better than that! ..and yes I know I have a lot of snack obsessions, snacks are the best ;)

I have gotten a couple of comments about bread from some of you and while I do agree that bread is not something we should eat large amounts of, then I do not in any way think there is something wrong with eating bread once in a while. To me the whole bread hysteria is getting a little out of hand as I have also talked about right here.

Ingredients:
2 pieces of wholegrain bread
1/2 avocado
1 ounce/25-30 grams feta cheese
10-15 fresh basil leaves
1 handful spinach
1 teaspoon balsamic vinegar
Sea salt + pepper

Simply toast it for a couple of minutes in a sandwich maker and it is ready to be served, enjoy!
