Wild berry/vanilla compote served breakfast parfait style

Hi lovelies, a lot of you have expressed how much you love easy recipes that does not require a lot of time or a bazilion ingredients, so I thought I would share another super simple and easy one with you. This wild berry/vanilla compote is so simple that I do not even have a proper recipe for it though, I rarely measure anything when I make it and I like to adjust the amount of sweetener etc. to the berries I use and what I serve it with.

All you need is:
Mixed berries (frozen are fine)
Chia seeds – optional
Pure vanilla powder
Honey

I served it with skyr (you can use greek yoghurt instead), granola (I used my favorite peanut butter granola) and fresh berries.

To make the compote you simply add your favorite berries to a small sauce pan (I used a mix of frozen wild berries with blueberries, blackberries, currants and raspberries) and bring it to a boil, let it simmer for a couple minutes while you add chia seeds, a little pure vanilla powder and honey – adjust amounts to your taste. Set aside to cool, I love to serve it while it is still a bit warm. Layer the berry/vanilla compote with skyr/greek yoghurt, granola and fresh berries, enjoy!
