Healthy acai breakfast parfait with skyr and homemade granola

Acai smoothie:
1 cup frozen blueberries & raspberries
1-2 tablespoons acai powder (buy it here or here. Affiliate links)
1 teaspoon maca – optional (I use this one, affiliate link)
1 banana
If needed a little liquid stevia or acacia honey
Almond or oat milk to blend

2 cups rolled oats
2 handfuls chopped almonds
2 handfuls sunflowerseeds
2 handfuls dried mulberries
3 tablespoons chia seeds (get it right here or here, affiliate links)
2 tablespoons ground flaxseeds
1 teaspoon pure vanilla powder
2 tablespoons honey


  1. Start by making the granola, simply melt the honey on a pan on medium heat, add the oats, almonds, sunflower seeds and vanilla and stir well until it is covered in honey. Toast it for about 10-15 minutes – while stirring – until it is lightly golden. Pour it onto a sheet of baking paper to cool and mix in the chia seeds, flaxseeds and mulberries. Store in an airtight container.
  2. To make the acai smoothie simply blend all the ingredients together – make sure not to add too much milk or you won’t be able to layer it – and pour it into a big glass or jar.
  3. Add skyr (or greek yoghurt/coconut yoghurt etc.), granola and fresh blueberries and it is ready to be served, enjoy!
