Super easy rainbow fruit popsicles
Hello lovelies! After I posted this recipe for berry marbled yoghurt popsicles I have received emails from some of you that asked if I could share more popsicle recipes, but make it vegan friendly this time. I had actually already made these colorful popsicles before I got the emails (haha yes it always takes me forever to post things on the blog), so the timing was quite perfect! These yummy rainbow fruit popsicles only contains fruit and berries, so they are all healthy, vegan friendly and does not contain any added sugar or other nasties. The popsicles are beyond easy to make (I cannot even call this a recipe) and you can easily adjust it to your taste by choosing your own favorite fruits and berries!
Haha and please ignore the fact that they are a little weird looking! I was making these at my parents place and I hadn’t tried using these molds before, so I apparently I didn’t fill enough pineapple juice in them.
Your favorite fruit and berries, I used kiwi, blueberries, raspberries and strawberries. I really wanted to make a tropical version with pineapple, passionfruit and mango, but I couldn’t find any passion fruit or mango at the store.
A very ripe pineapple (the riper, the sweeter) to juice or store bought pineapple juice (no added sugar) if you do not have a juicer.
- Start by washing and prepping your fruit and berries of choice. You need to cut them into smaller pieces that will fit into the popsicles molds.
- Juice your pineapple – I used about half a pineapple – and fill your popsicle molds with the fresh fruit, berries and pineapple juice.
- Let it sit in the freezer for a couple of hours and they are ready to eat, enjoy!
