Is there anything better than enjoying good food in good company? It is certainly one of my absolute favourite things to do and I especially love cooking and sharing meals with my friends and family. One of the best ways to enjoy food and each others company are in my opinion over brunch, it’s perfect because it usually consist of a lot of different foods and drinks, so you know that there will be something for everyone and it’s so nice to be able to taste so many different things while spending time with your loved ones. Having so many different small dishes also means that you can sit there and eat and talk for hours whereas a normal meal is usually over quite fast.

These photos are from when I had two of my girlfriends over to enjoy brunch with my little sister (roomie) and I. I put together some of my favourite foods like healthy nana pancakes, breakfast parfaits, smoothies, lots of fresh fruit, toasted wholegrain bread with cream cheese and avo + much more. You can find a list of everything I used below + the recipes as well. The brunch is made with Valio products, which is perfect as my sister and one of my friends are lactose-intolerant, so I didn’t have to go out and buy separate products for them – and you cannot taste it, so there’s really no need to buy both lactose-free and regular dairy products.

Our brunch table consisted of the following:
Lots of fresh fruit
Raspberry smoothies – see the recipe below
Tea
Crisp bread
Wholegrain buns
Valio lactose-free butter (there’s also this one)
Sliced avocado
Valio lactose-free cream cheese
Valio lactose-free emmental cheese
Little breakfast parfaits – see recipe below
Healthy banana pancakes – see recipe below

Breakfast parfaits
To make these cute little breakfast parfaits I simply layered Valio yoghurt, homemade granola, fresh berries and sliced banana, so good! I served 3 different yoghurts so everyone could pick their favourite – the banana/vanilla and the natural/plain yoghurt are lactose-free.

Pancakes, 10-12 small ones:
4 eggs
2 bananas
1 cup oats
3 tablespoons plain yoghurt or greek yoghurt – I used Valio lactose-free yoghurt natural
1/4 teaspoon baking powder
1/2 teaspoon organic vanilla powder

Coconut oil to cook the pancakes in – see the directions below

Directions:

  1. Add all the ingredients to a blender or food processor and pulse until smooth
  2. Heat a non-stick pan – I prefer to make them on medium to high heat – and add a little coconut oil. When the oil has melted pour a circle of the pancake batter onto the pan, I used about 2-3 tablespoons per pancake
  3. Cook the pancake for about a minute or two until it is golden brown on the underside – flip it – and give it about a minute on the other side. The cooking time depends on how thick you make your pancakes
  4. I served the pancakes with sliced banana and chopped dark chocolate + Valio lactose-free yoghurt natural drizzled with a little pure maple sirup and fresh berries, so good!
  5. Enjoy!

Raspberry smoothies, 4 glasses:
2-3 bananas
2 1/2 cup frozen raspberries
5-6 tablespoons goji berries
2 cups milk of choice – I used Valio lactose-free milk
2s teaspoons maca powder – optional

Simply add everything to a blender and blend until smooth, add more milk if needed and serve right away.
