Beet’n’berry breakfast smoothie bowl

Beet and berry smoothie bowl

Hi lovelies! I am just stopping to share one of my new favourite smoothie ingredients with you – beetroot!! I know that some of you have probably already used this for ages while others might think it sounds horrifying to add beet to a smoothie, but trust me and give it a try, it taste amazing and it give the most gorgeous color (and don’t even get me started on the nutritional and health benefits of beets). I have actually tried the whole beetroot in smoothies thing before, but I never liked the texture when I just added chopped raw beet (maybe if I had a vitamix) and baking the beetroot like some does before blending it just seems like too much trouble, so beet smoothies never really caught on with me.. until now that is! I have finally found the perfect way for me to add some more beets to my diet (seriously beets are such a superfood bursting with nutrients and so inexpensive too), I simply juice a whole lot of beets and then add the pure beet juice to ice cube bags and freeze it! It makes it so easy to pop a couple of frozen beet cubes into my smoothies and I avoid that gross grainy texture from adding whole beets to it. The beet cubes are great to add to my fresh beet/orange/lemon/ginger juices instead of regular ice cubes as well. I hope you like my little tip, have a great weekend!

5 frozen beet cubes
1/2 cup frozen raspberries
1 1/2 banana
1 tablespoon hemp seeds
Oat milk to blend

Simply add everything to a blender and pulse until smooth. Add your toppings of choice and serve right away – I added passion fruit, kiwi, blueberries, raspberries, banana, hemp seeds, freeze-dried raspberry and some homemade muesli after the photo was taken, enjoy!
