Colorful brunch // Avo sandwiches, homemade chia jam, caramelized banana and more
Hi lovelies, after I shared this colourful breakfast/lunch platter with you on snapchat (mokai_giraf) I got a lot of snaps from you asking me what I was, so I though I would do a quick little post to show you. I loooove making this for myself on mornings where I’ve slept in and then eat it in bed while watching an episode of whatever tv-show I’m hooked on at the moment (I’ve finished all my favourite ones, so if you have one you can recommend please share!). This colourful deliciousness is pretty much just toasted wholegrain toast with mashed avo, salt + pepper and lemon juice // wholegrain toast with homemade raspberry chia jam (recipe below) // wholegrain toast with a drizzle of akacia honey, caramelized banana (how-to below) and pomegranate // and of course a lot of fruit, kiwi, passion fruit, pomegranate, raspberries and blueberries, so good!
225 gram frozen raspberries
2 tablespoons honey
3 tablespoons chia seeds
1/2 deciliter water
Simply add the raspberries, honey, chia seeds and water to a saucepan and bring it to a slow boil. Let it simmer for a couple of minutes, mash the raspberries a little, add the chia seeds and set it aside to cool. Store it in the fridge in an airtight jar, the chia jam will be ready after a couple of hours when the chia seeds have expanded and soaked up the excess liquid.
Caramelised banana is super easy to make, simply add a little honey, a little coconut oil, cinnamon and banana slices to a pan on medium to medium high heat and fry them for 4-5 minutes on each side (I was crazy hungry and impatient, so I only gave these 5 minutes in total, but seriously still so good!) until they become sticky and caramelized, so yum!
