Dessert parfait with chocolate chia pudding, peanut butter and caramelized banana

This super messy dessert parfait is definitely not the most photogenic dessert I have ever made, but it was too good not to share! It is so rich and indulgent in it’s flavours that it is hard to believe that it is made with all healthy ingredients! The portion size is going to be quite small (the recipe yields two small servings, but in the photo is shown both served in one jar), but this is a quite “heavy” and rich dessert so you really do not need much to satisfy your dessert cravings.

Ingredients –  2 small servings:

Chocolate chia pudding
2 deciliter oatmilk (all kinds of milk will work)
3 tablespoons chia seeds (buy it right here or here, affiliate links)
1/2 – 1 teaspoon vanilla powder
1-2 tablespoons pure maple sirup
1 1/2 tablespoon raw cacao powder

Peanut butter
Caramalized banana – see how to below
Raw chocolate sauce – see how to below

Caramelized banana
Caramelised banana is super easy to make, simply add a little pure maple sirup, a little coconut oil, cinnamon and banana slices to a pan on medium to medium high heat and fry them for 4-5 minutes on each side (I used 1 banana for this parfait) until they become sticky and caramelized, so yum!

Raw chocolate sauce
I added a little raw chocolate sauce as well. Simply mix 1 tablespoon liquid coconut oil, 1 tablespoon raw cacao powder and 1/2 tablespoon pure maple sirup and you’re done – easy, peasy right?!

Directions:

  1. Start by making the chia pudding by simply mixing all the ingredients together and let it sit in the fridge for a couple of hours or overnight to allow the chia seeds to soak up the liquid – make sure to stir it a couple of times.
  2. When the chocolate chia pudding is ready to be served, you simply start to layer it in to glasses/jars – or one if you have a very sweet tooth ;) First add the chia pudding then a peanut butter layer, repeat, and top it with the caramelized banana and raw chocolate sauce, enjoy!
