Easy peanut butter chocolate chip cookies

I found this amazing recipe for peanut butter chocolate chip cookies over on the blog NeoHippie (check out her blog if you do not know it already, it is amazing!) and I just knew that I would have to give them a try! I used this recipe, but made a few alterations since I didn’t have all the ingredients and since I prefer to use buckwheat flour instead of regular flour – I didn’t have enough though, so I used half and half. I will try to make them only with buckwheat flour the next time and if it works out well I’ll update the recipe. These cookies are just so unbelievably easy to make, so yummy and and still healthier than regular cookies, what’s not to love about that?! :D

Ingredients:
1 1/2 deciliter (about 0.6 cup) plant milk (I used ricemilk)*
2 deciliter (about 0.8 cup) peanut butter
1/2 teaspoon pure vanilla powder
2 deciliter (about 0.8 cup)  coconut sugar
1 deciliter (about 0.4 cup)  buckwheat flour**
1 deciliter (about 0.8 cup) regular white flour**
1/2 teaspoon baking powder
50 grams of dark chocolate (I used 70% cacao), roughly chopped

*you might need to add 1-2 extra tablespoons of milk
**you can just use all white flour

Directions:
Simply add all the ingredients to a bowl and stir until everything is mixed well. The cookie batter will be really sticky, so use a spoon to add 9 cookie dough blobs on a baking pan lined with baking paper. Use the spoon to press the cookie dough blobs flat and cookie like. Bake them in a preheated oven at 200 c / 400 f for about 20-22 minutes. And they’re ready to eat, enjoy!
