Hi lovelies, I know that some of you have been wondering about the reposted and updated recipes that have appeared on the blog lately, so I thought I would give you an explanation + another updated recipe (one of my absolute favorites!). I am in the process of going through the blog’s archives to update some of my older recipes and give them a little makeover. Many of them are from back when I was blogging on Blogspot, which means that the posts were moved from one platform to another and now the layout looks a bit funny and the photos are the wrong sizes. I am slowly working my way through all those old posts to update them, so they fit my new layout and sometimes even to update the recipes. Some of the old recipes are absolute favorites of mine that I make over and over again and often I have found new and better ways to make them – maybe a little twitch in the ingredient list or a new and easier way to cook them. When that happens I like to correct the recipe and then post it post again as a new and updated recipe, so you newcomers out there can also enjoy some of my old favorites and so that my old readers can see the new updated version.

The recipe for these ‘Cherryberry’ bars are definitely one of those old favoirtes, I have made these delicious little beauties so many times since Loni Jane first posted the recipe on her Instagram. They are beyond delicious and I love how the sweet berry/coconut filling complements the rich and slightly bitter flavour of the raw chocolate.

Raw chocolate:
100 gram raw cacao butter
6 tablespoons raw cacao powder
1 tablespoon coconut oil, melted
Sweetener of your choice, agave, honey, coconut sugar etc. – I used pure maple sirup

Berry filling:
10 cherries (pitted) and 6 strawberries
1/3 cup desiccated coconut
1 tablespoon coconut oil, melted
1/4 teaspoon pure vanilla powder or vanilla extract

Directions:

  1. The filling: Mix all the ingredients together in a blender or food processor, I prefer to only give it a quick pulse, so there is still some texture left in the berry filling. Place the filling into a square container lined with baking paper and pack it in tight and flat. Place in the freezer for 1 hour or more to allow it to firm up.
  2. The chocolate: While the berry filling sits in the freezer you can prepare the raw chocolate. Melt the cacao butter and coconut oil in a water bath by placing it in a bowl and then place that bowl in a pan or larger bowl filled with hot water. Once melted, add in the raw cacao powder and whisk well – using a metal whisk gives the best results. Whisk in the sweetener of your choice as well, taste, and add more if you prefer a sweeter taste.
  3. Take the berry filling out of the freezer and pull it out of the container using the sides of the baking paper. Cut the berry filling into little bars and dip them into chocolate mix – I dipped it several times to get a thick coating. Place the bars in the fridge to set. And you are done, enjoy!!

Note: Store the chocolate bars in the fridge until serving, the raw chocolate melts quite easily.
