Creamy chia breakfast pudding with vanilla and coconut + Why I have been MIA
Hi lovelies, I am so sorry about the complete lack of posts lately, I cannot believe that it has been more than two weeks since I last updated the blog!! Those of you following me on snapchat (username: mokai_giraf) already knows this, but the reason for my absence here on the blog and on social media is that this past month I have quite impulsively not only bought, but also renovated and moved into a new apartment – haha I am definitely not wasting any time!! As some of you know my sister and I used to live together in a tiny apartment with an even tinier kitchen and as much as I love my sister, then it was driving me absolutely mad, so I am beyond happy to have this big apartment (as in I now have 4 (!!) rooms + a basement and a garden) all to myself! This is going to be amazing for the blog as well since I now have a proper kitchen with a dishwasher (finally!!) + a decent sized fridge (both my old ones were beyond tiny) and for the first time ever since I moved out from my parents an actual freezer!! Haha yep I have only ever had those annoying little freezer boxes inside the fridge, which is always awful, but even more so when you are a foodblogger!
Anyways, finally having a proper kitchen and even a garden means that I will have the opportunity to really step up my blog-game and create a lot more recipes than usual + I will be able to start growing my own produce, which is something that I am beyond excited about! I am planning to share the whole process with you guys, eek I am so excited!! What should I plant first? I am thinking herbs and edible flowers, haha because that should be quite simple to start with, since I am not so sure whether I have a green thumb or not! ;)
Okay aaand to get back on track with what this post was actually supposed to be about, let me introduce you to my absolute favorite easy, nutritious and super delicious breakfast for busy mornings! You can prep this in the evening to save time and even make a big batch so you have breakfast for the entire week! I have shared so many chia pudding recipes before (find them right here!), but this one is the one that I just keep making over and over again, it’s so good!
1 deciliter (equals 100 ml / 0.4 cup) almond milk
1 1/2 tablespoon chia seeds (buy it right here or here, affiliate links)
1 1/2 tablespoon shredded coconut
1/2 – 1 teaspoon pure vanilla powder
A little stevia, honey or whatever sweetener you prefer – adjust amounts to your liking
4 tablespoons vanilla skyr (can be subbed for vanilla flavored greek yoghurt or regular yoghurt, coconut yoghurt etc.)
- Mix all the ingredients for the chia pudding together – except the vanilla skyr – and let it sit in the fridge overnight or at least for a couple of hours to allow the chia seeds to soak up the milk.
- When the chia seeds have fully soaked up the milk and has a pudding like consistency then you can stir in the vanilla skyr and it is ready to be served. Taste it to see if you need to adjust the amount of sweetener.
- Add your toppings of choice (I added raspberries, blueberries, strawberries, blackberries and fresh mint leaves) and enjoy!
