Healthified banana bread muffins with dark chocolate
I have been so excited to share the recipe for these delicious banana bread muffins with you guys and from all the screenshots over on snapchat it seems that you have too ;) I have been eating these all week for dessert, but also as an extra treat for breakfast or as an afternoon snack, so yum! I have actually made the same recipe as a regular banana bread before (find it right here!), but I like them a lot more as muffins. They are so moist (haha sorry, I hate that word too!) and spongy + much easier to quickly grab and bring with me. You can easily sub the dark chocolate for chopped nuts or other goodies, but I can really recommend making them with the chocolate though, so delicious! Ingredients – 9 muffins:
3 bananas (ripe with brown dots)
1 deciliter (equals 0.4 cup) akacia honey
1/2 deciliter (equals 4 1/2 tablespoon) coconut oil
4 tablespoons skyr or greek yoghurt
1 teaspoon baking soda
1/2 teaspoon baking powder
2 teaspoons cinnamon
1 teaspoon pure vanilla powder
1/3 teaspoon seasalt
1 tablespoon coconut sugar
3 1/2 deciliter (equals 1.5 cup) buckwheat flour
50 grams (equals 1.76 ounces) dark chocolate (I used one with 70% cacao), chopped
- Start by mashing the bananas with a fork. Add them to a bowl with the rest of the wet ingredients and mix everything together. Add the dry ingredients while stirring and make sure everything is well mixed together.
- Pour the muffin batter into a muffin pan or muffin baking cups, add a slice of banana for decoration if you’d like and bake them in a preheated oven at 175 c // 350 f for 25-30 minutes until they’re lightly golden and properly baked throughout. And you are done! Easy peasy right? enjoy!
