So you know how I always complain about the awful Danish weather? Well these past few days we have had the most amazing warm and sunny weather, it has actually been warmer than it is on most days during summer, so it is safe to say that I am more than happy with the turn our spring weather has taken! The timing is quite impeccable too as I have teamed up with WAUW ice cream to test their delicious ice creams without added sugar and create some summery recipes for you guys!

I usually like to keep it quite simple when it comes to ice cream, I think it is a shame to get too creative and lose the original ice cream flavour, but I also wanted to share some proper recipes with you guys, so I decided to both make milkshakes (strawberry, vanilla and chocolate/banana/peanut butter) and super simple ice cream cups with lots of delicious toppings! The milkshakes are so delicious and perfect to enjoy out in the summer sun to cool down a little. I enjoyed these out in my new garden, haha it is still a complete mess, but I will get to it eventually and it was so nice to just sit on the grass (no garden furniture yet) and enjoy the amazing weather! The milkshakes are healthier than the classic versions as the WAUW ice creams are made without any added sugar and artificial coloring + the rest of the milkshake ingredients I used are all healthy and nourishing – the ice cream ensures that the shakes still have that indulgent and beyond delicious flavour though!

Chocolate/banana/peanut butter milshake:
100 grams (3.5 ounces) WAUW vanilla ice cream without added sugar*
1 deciliter (0.4 cup) milk (I used oat milk)
1/2 banana, ripe with brown dots
1/2 teaspoon pure vanilla powder
1-2 tablespoons raw cacao powder
1-2 tablespoons peanut butter

I topped it with raw chocolate sauce (simply mix 1 teaspoon melted coconut oil, 1 teaspoon raw cacao powder and 1/2 teaspoon agave syrup) and chopped dark chocolate (70% cacao).

*I think it would taste even better with chocolate ice cream, but sadly it was sold out.

Strawberry milkshake:
100 grams (3.5 ounces) WAUW strawberry ice cream without added sugar
2 deciliter (0.8 cup) milk (I used oat milk)
6 large frozen strawberries
1/2 teaspoon pure vanilla powder

Vanilla milkshake:
150 grams (5.3 ounces) WAUW vanilla ice cream without added sugar
1 deciliter (0.4 cup) milk (I used oat milk)
1 teaspoon pure vanilla powder

Directions:
To make the milkshakes simply blend the ingredients, pour into a glass and serve right away!

Ice cream cups with yummy toppings
I served the strawberry ice cream with a mix of healthy toppings – strawberries, blueberries, raw coconut chips, kiwi, banana and freeze-dried raspberry.

The vanilla ice cream I served with a bit more indulgent toppings – dulce de leche (I love that stuff way too much!), chopped dark chocolate (70% cacao) pecans, almonds and banana – this one was definitely my favorite, so delicious!
