Rhubarbs and strawberries are finally back in season, which means that I have been making crazy amounts of crumbles, pies and compote – haha I have even been eating this crumble for dinner a couple of times, at least it is a healthified version ;)

I absolute LOVE how easy this crumble is to make and it is so delicious and filling as well. It gets quite messy and isn’t exactly the prettiest dessert, but what it lacks in the looks department it certainly makes up for in flavor – so yum! I love to serve it with skyr or greek yoghurt for some added freshness + strawberries as well.

Healthified rhubarb and strawberry crumble

Ingredients – 2 servings:
4-5 small rhubarb stalks, cut in 1 cm. pieces
1 1/2 cup (3 1/2 deciliter) roughly chopped strawberries
1/2 teaspoon pure vanilla powder
2 tablespoons akacia honey or pure maple sirup*
2 teaspoons chia seeds – optional

Crumble topping:
1/2 + 1/4 cup ( 1 + 2/3 deciliter) rolled oats
1 tablespoon flour (I used buckwheat flour)
1 handful almonds, chopped
1 handful sunflower seeds
1/2 teaspoon cinnamon
1/3 teaspoon pure vanilla powder
1 1/2 teaspoon coconut oil, melted
1 tablespoon akacia honey or pure maple sirup

*Adjust amounts to your liking

Healthified rhubarb and strawberry crumble

Directions:
Start by preheating your oven to 200 c // 400 f. Add the rhubarb, strawberry, vanilla and honey/sirup to a little ovenproof dish (I used one that was about 16×16 cm.), mix it well and place it in the oven. Bake it for 30 minutes at 200 c // 400 f. While the rhubarb/strawberry mix sits in the oven you can start preparing the crumble topping. Simply add all ingredients to a bowl and mix well. When the rhubarb/strawberry mix have been in the oven for 30 minutes take it our and add the chia seeds, mix well. The chia seeds will soak up the excess liquid. Add the crumble topping as well and put it back in the oven for 15-20 minutes until the topping is golden and crispy. Serve it warm with skyr or greek yoghurt and fresh strawberries, enjoy!
