Healthy banana waffles with strawberry/rhubarb compote
Hi lovelies! I am just quickly stopping by to share the recipe for these beyond delicious (and healthy!) banana waffles with you guys. I am actually on my way out the door to have dinner with my little sister and watch the new X-Men movie, so I will keep it short ;)
These yummy waffles are actually based on my favorite banana pancake recipe, but since I am bit lazy when it comes to making pancakes, then I have been making them as waffles instead ever since I bought my waffle iron. Haha waffle irons are such a gift to lazies who enjoys indulgent breakfasts ;) I love to serve these waffles both for breakfast and for dessert, I just adjust the toppings accordingly, haha even though I sometimes go all in and make the dessert version for breakfast – I mean it is still a healthified version so what the hell ;)

Ingredients – 4 waffles:
1/2 cup oats
1-2 tablespoons skyr/greek yoghurt
1/4 teaspoon baking powder
1/3 teaspoon organic vanilla powder
Rhubarb/strawberry compote – find the recipe right here!
Vanilla skyr/greek yoghurt
Chopped dark chocolate (I used one with 70% cacao)
Simply add all the ingredients to a blender and pulse until you have a smooth waffle batter. Pour the batter into a heated waffle iron (grease it with a little coconut oil first if needed), cooking time depends on your waffle iron, but keep an eye on them so they don’t burn. When the waffles are done I like to let them rest for a couple of minutes on a rack to let them firm up/crisp up a little before serving. Add your toppings of choice and serve them while their still warm – I served mine with the rhubarb/strawberry compote, vanilla skyr (I prefer to make my own, simply mix plain skyr or greek yoghurt with pure vanilla powder and acacia honey or pure maple sirup), fresh strawberries and chopped dark chocolate.
