I have been visiting my parents for a couple of days and it has just been pure bliss! The weather has been amazing, which always makes me happy and I have been spending so much time outside in their gardens surrounded by our baby fnagsters (aka. cats), flowers and blossoming trees – ah I get so much joy from that, I am definitely a nature child at heart! My mom and I went to a plant nursery yesterday (I think that’s the English name for it?) and I found so many flours, berry bushes and fruit trees that I need to get asap! I am so excited to start working on my garden, it’s still a big mess and I haven’t had the time to do anything with it since I moved into my new place, but I certainly have some big plans with it! I will blog about the whole thing and show you some before and after photos + write about growing my own veggies and berries, eek so excited about this! :D

I couldn’t help myself, I just had to include some of the beautiful lilacs from the gardens in these photos – they are some of my favorite flowers! Haha but enough about flowers, this post is supposed to be about homemade popsicles and these are a must try! I made these yummy popsicles with blueberry and vanilla for my parents and I to enjoy out in the lovely weather and I just cannot recommend them enough – they are so easy to make, contains only healthy ingredients and are just so delicious!

Healthy blueberry and vanilla popsicles

Ingredients – 4 popsicles:
3 deciliter (1 + 1/4 cup) skyr natural or greek yoghurt
1/2 teaspoon pure vanilla powder
1 tablespoon akacia honey or pure maple sirup
1/3 teaspoon liquid stevia
1 1/2 deciliter (0.6 cup) blueberries, frozen are fine*

*preferably “real” blueberries, I think they are called wild blueberries, they are small, blue all the way through and much more flavorful than the north american originated blueberries that are the most common blueberries on the market.

Directions:
Simply mix all the ingredients and pour them into popsicle moulds. Put in the popsicle sticks and let them set in the freezer for at least 5 hours before serving, enjoy!
