Healthy parfaits with strawberry/rhubarb compote and homemade granola
Well I told you that you would be seeing a lot more of my strawberry/rhubarb compote didn’t I? ;) I still have so many rhubarbs left from when I visited my parents and this compote is one of my favorite ways to use it, it is so delicious, super easy to make and can be used in so many different ways! This time I used it in these beyond delicious dessert (or breakfast?) parfaits! I made two different kinds, one with vanilla “cream” and one with vanilla chia pudding – I know some of you aren’t too fond of chia puddings, so I thought I would give you an alternative.
These little parfaits are surprisingly filling, so I love to have them for breakfast, but they were actually meant as a healthy dessert option – dessert for breakfast, it doesn’t get much better than that! ;)
You will need the following to make the parfaits:
Strawberry rhubarb compote – find the recipe right here!
Chia pudding – find the recipe right here!
Homemade granola* – find the recipe below.
Vanilla “cream”* – find the details below.
*You can of course also just use a store-bought granola and store-bought vanilla flavored skyr, greek yoghurt or any other kind of yoghurt.
2 cups rolled oats
2 handfuls chopped almonds
2 handfuls sunflowerseeds
1-2 handfuls dried mulberries
3 tablespoons chia seeds
2 tablespoons hemp seeds
1/2 teaspoon pure vanilla powder
1/2 teaspoon cinnamon
2-4 tablespoons honey
To make the granola simply melt the honey (adjust amounts to your liking) on a pan on medium heat, add the oats, almonds, sunflower seeds, cinnamon and vanilla and stir well until it is lightly covered in honey. Toast it for about 10 minutes – while stirring – until it is lightly golden. Pour it onto a sheet of baking paper to cool and mix in chia seeds, hemp seeds and mulberries. Store in an airtight container.
Simply mix plain skyr or greek yoghurt with a little pure vanilla powder and your sweetener of choice, adjust amounts to your liking. I added a couple drops of liquid stevia + tiny bit of acacia honey.
To assemble the parfaits you quite simply layer the chia pudding or vanilla “cream (I made a parfait with each, but you can also layer both in the same parfait) with the strawberry/rhubarb compote and the homemade granola. How much you use of each is completely up to you and your personal preference. I know you sometimes like me to be more specific with the amounts, but just add as much or as little as you’d like and are able to eat, I never measure anything when making parfaits :) I love to add some fresh strawberries as well, enjoy!
