Chocolate chip blondie topped browniesAre you guys ready for a completely over the top and beyond delicious dessert? These chocolate chip blondie topped brownies are so indulgent, yummy and gooey that you won’t believe it is actually a healthified version made without refined sugar, butter and white flour, instead it is made with more nutritious options and there is even avocado in the brownie layer and chickpeas in the blondie layer! I promise you that you cannot taste it though, these babies are so tasty and everyone I have served them for have been asking for the recipe – haha and they were definitely a bit surprised when they saw some of the more “creative” ingredients, which I take as a good sign that you cannot taste that they are healthified ;)

The brownie layer is based on this recipe and the blondie layer on this recipe, I love finding new ways to use my old recipes!

Chocolate brownie layer:
100 gram dark chocolate (I used 70% cacao)
2 avocados
1/2 cup (equals 1.2 deciliter) cacao powder
3/4 cup (equals 1.8 deciliter) coconut sugar
2 teaspoons pure vanilla powder
1/4 cup (equals 0.6 deciliter) buckwheat flour
1/4 cup (equals 0.6 deciliter) milk (I used oat milk)
2 eggs
1/2 teaspoon baking powder
1/4 teaspoon sea salt

Chocolate chip blondie layer:
1 can of chickpeas, drained and rinsed
1 deciliter (equals 0.4 cup) peanut butter (other nut butters should work fine as well)
2 tablespoons coconut oil, melted
1/2 – 1 deciliter (equals 0.2 – 0.4 cup) milk (I used oat milk)
1 deciliter (equals 0.4 cup) coconut sugar*
3 tablespoons buckwheat flour
1/2 teaspoon baking powder
1 teaspoon pure vanilla powder
A pinch of sea salt
70 grams dark chocolate (I used one with 70% cacao)

*I actually forgot to buy coconut sugar (idiot sandwich) and had to make some adjustments for this batch, which is why they look a lot lighter in color than they are supposed to, but my favorite is the batches I have made with the coconut sugar, so lets just ignore these babies very pale complexion and pretend that they are made with coconut sugar like I usually do ;)

Directions:
Chocolate brownie layer: Start by preheating you oven to 175 c / 350 f. To make the brownie batter start by melting half the dark chocolate (50 grams). I melted it in a warm water bath by simply placing the chopped chocolate in a bowl (preferably a metal bowl) and then placing that bowl into another (bigger) bowl that is filled with warm water. You can also melt it in the microwave or in a saucepan. While you wait for the chocolate to melt, add the avocado (pitted + skins removed) to a food processor and pulse until completely smooth. Then add the melted dark chocolate and pulse until the mixture is smooth. Add the remaining ingredients except for the other half of the dark chocolate and pulse until you have a smooth and well mixed brownie batter. Roughly chop the remaining chocolate and stir it into the brownie batter. Pour the batter into a pan or cake tin greased with a little coconut oil.

Chocolate chip blondie layer: Add the drained and rinsed chickpeas to a foodprocessor along with the peanut butter, coconut oil and milk and pulse until smooth. Add the rest of the ingredients – except for the dark chocolate – and pulse again until you have a smooth and sticky batter. Chop the dark chocolate and fold it into the blondie batter. Pour the batter onto the brownie layer and bake it at 175 c / 350 f for about 45-50 minutes until the blondie layer turns very lightly golden – I added a little bit extra chopped chocolate before baking, haha purely decorational you know ;) Let it cool down before cutting or it will be very soft and gooey – as you can probably tell from my photos I didn’t have the patience to wait long enough, but it is beyond delicious anyway though, enjoy!
