Can you guess the theme of todays post? ;) Haha yes as you probably guessed it is all about GREEN today – I definitely need it after yesterday’s “food” intake! To make up for that total sugar coma I made this vibrant mean green smoothie bowl topped with matcha rawnola for breakfast. I know it looks very green, but it actually tastes really good, haha and not like lawn at all – it is really fresh and delicious with a hint of ginger, lime and mint, so yum! I topped it with freshly made matcha rawnola for some added sweetness, chewiness and extra nutrition, it goes perfectly with the smoothie! I also added lots of homegrown goodies from my garden + edible flowers and raw coconut chips.

The berries, herbs and edible leaves are from my garden, I know I sound like a total nerd, but my garden and homegrown produce just makes me so incredibly happy! I am so sad that winter is already on its way, I only just got started working on my new garden and I hate having to wait until next year to really make the most of it. Hopefully my herbs and berry bushes will last quite a while longer, I am really trying to enjoy them as much as possible – do you guys have any tips on to preserve fresh herbs? Dry them? Freeze them? I am completely new to having a garden and growing my own things, so any tips are much appreciated!

Mean green smoothie bowl
100 gram frozen spinach
100 gram frozen broccoli
1 ripe banana
10 gram fresh ginger
The juice from 1/2 lime
Fresh mint leaves – adjust amounts to your liking
150 ml milk (I used oat milk)

Simply add everything to a blender and pulse until smooth. Pour it into a bowl and add your toppings of choice – I topped mine with matcha rawnola (recipe below), berries from my garden, raw coconut chips and edible flowers and leaves ❤︎

Matcha rawnola
1 deciliter (equals 0.4 cup) rolled oats
1/2 deciliter (equals 0.2) cashews, unsalted
1/2 deciliter (equals 0.2) shredded coconut
1 teaspoon pure vanilla powder
8 dates
1-2 teaspoons matcha – I use this brand, but you can also buy it right herehere and here!

Add the oats, cashews and coconut to a foodprocessor and pulse until they are finely chopped, then add the rest of the ingredients and pulse until everything is well mixed and have the desired texture – make sure not to pulse for too long or else it won’t be nice and chewy. Store in the fridge in an airtight jar.
