Halloween inspired spicy baked and stuffed bell peppers Evening lovelies! Are you ready for one last Halloween inspired recipe? I didn’t think I would share anymore this year, but when I found these super cute orange bell peppers I just had to make one last one. I cannot take any credit for the idea whatsoever, stuffed “pumpkin” bell peppers are probably one of the most popular savory halloween recipes out there and I get why, I mean how cute are they?! :D And so easy to make!

Halloween inspired spicy baked and stuffed bell peppersIngredients:
3 bell peppers
1 deciliter (equals about 0.4 cup) uncooked quinoa
1 vegetable bouillon cube
1 small onion, finely chopped
1-2 cloves of garlic, crushed
1/2 can (200 grams) of black beans
4-5 tablespoons tomato puree
1 teaspoon ground cumin
1/2 teaspoon paprika
1/3 teaspoon cayenne peber
1/3 teaspoon dried basil
1/3 dried oregano
Sea salt + pepper

A little bit of shredded cheese – optional

Halloween inspired spicy baked and stuffed bell peppers Directions:
Start by pre-heating your oven to 175 c / 350 f  and boiling the quinoa according to package instructions – add the vegetable bouillon cube to the water. While the quinoa cooks you can prep the filling – add the onion, garlic, tomato puree, black beans and spices to a bowl and mix well. Add the cooked quinoa as well and mix everything together. Carve out the bell peppers and remove the seeds. Use a knife to cut the bell peppers like little mini pumpkins and add the filling. Bake them in the oven for about an hour at 175 c / 350 f until the bell peppers are soft and tender. I bake them with the tops off. If you’d like you can add a little bit of shredded cheese at the end, bake it for a couple of minutes until the cheese melts and serve the bell peppers right away, enjoy!
