Pumpkin spiced apple granola
This delicious pumpkin spiced apple granola was one of the first recipes I created using my homemade pumpkin spice mix, haha and I have since used for pretty much everything so be prepared for a lot of pumpkin spiced recipes! This is definitely one of my favorites though, I love adding it to my green smoothie bowls (recipe here and here) in the morning for some extra crunch and sweetness, so delicious and filling! ❤︎

Pumpkin spiced apple granola
Ingredients:
1 apple, finely chopped
1 cup rolled oats
1/2 cup nuts (I used almonds)
1/2 cup seeds (I used pumpkin seeds and sunflower seeds)
1/4 cup honey
4 tablespoons homemade pumpkin spice mix – recipe right here!
5 dried dates

Pumpkin spiced apple granolaDirections:
Start by preheating your oven to 175 c // 350 f. Add all ingredients (except the dried dates) to a bowl and mix well until everything is well coated in the honey and pumpkin spice mix. Pour the mixture onto a baking pan lined with baking paper and make sure to divide it evenly. Bake the granola in the oven for about 30 minutes and make sure to stir it every 5-10 minutes. It is done when it is golden (but not burned, keep an eye on it!) and nice and crispy. Chop the dried dates into smaller pieces and add it to the granola. Mix well and store it in an airtight jar, it should keep for about a week. Enjoy!
