Kefir superfood breakfast

Morning lovelies! I am sorry about the lack of updates last week, my sister and I went on quite an impulsive trip to London to do some Christmas shopping (haha and a lot of regular shopping) and to just enjoy how pretty the city is during Christmas while eating a ton of good food! We definitely went a little overboard at lunch and dinner with 2-3 courses each time (pure bliss), but our breakfasts most days were quick and quite horrible as we just wanted to get out of the apartment and explore London without wasting too much time. As you know breakfast is my favorite meal, so I of course had to make up for the lousy vacay breakfasts as soon as we got home with some big and healthy meals.
One of my favorite meals since we got home is this beyond delicious kefir breakfast spread that I want to share with you guys todays. Kefir is a cultured dairy product that is one of the most probiotic rich products available and it has some quite amazing nutritional and health benefits that I want to go into depth with in another post asap! I have been hearing so much about kefir and its benefits this past year, but it is only just recently that I finally gave it a go myself and I cannot wait to experiment with recipes and different ways to serve it – I read that some of my favorite bloggers even make their own!
For this breakfast spread I used Valio natural kefir and kefir with raspberry flavor, both of them are lactose free, which made it even easier to make breakfast for my lactose intolerant sis and I as I didn’t have to buy separate products for her. I baked superfood breakfast buns with the natural kefir along with breakfast bowls served with raspberry kefir to drink on the side, so yum! You can find the details and recipes below ❤︎
Kefir bowls and drinks
I served the Valio kefir natural as little breakfast bowls topped with homemade granola, berries, bee pollen and freeze dried raspberry, so delicious! On the side I simply served the Valio kefir with raspberry flavor on its own like kefir is traditionally intended to be consumed, it has the perfect consistency to be served as a delicious breakfast drink, it is so yummy and I am obsessed with how light and bubbly it is!
Kefir superfood buns – 12 buns
2 1/2 deciliter Valio kefir natural
3 deciliter water
10 grams of baker’s yeast (block)
2 1/2 teaspoon sea salt flakes
1 tablespoon honey
200 grams wholegrain spelt flour
400 grams wheat flour
30 grams chia seeds
30 grams hemp seeds
30 grams flax seeds
Simply add the water and baker’s yeast to a bowl (I used the bowl from my Bosch stand mixer to save on the washing) and stir until the yeast has dissolved into the water. Then add the rest of the ingredients except the flour and stir well. Start slowly adding the flour and muesli mix while mixing. I used my Bosch stand mixer to knead the dough, I cannot express how much I love not having to do this by hand!!
Add the dough to a bowl greased with olive oil, cover it and let it rest in the fridge overnight. Divide the dough into 12 buns and place them on a baking tray (or two) lined with baking paper, top them with extra seeds if you’d like and bake them for about 16 minutes at 250 c / 500 f. Make sure to keep an eye on them, the baking time varies depending on the oven. The buns are ready when they turn lightly golden and are baked throughout, I served them warm with lots of raspberry chia jam, enjoy!
