Maqui smoothie bowl with cauliflower
Okay I know what you are thinking – cauliflower in smoothies?! Yeah it might sound a bit odd if you haven’t tried it before, but if you use frozen cauliflower, then I promise that you cannot taste it all (just like broccoli!). It is such an easy way to add more veggies to your meals, I have been subbing my beloved banana for cauliflower in my smoothies this week and I absolutely love it! I mean banana will always be my favorite when it comes to smoothies, but I am trying to eat a little less fruit and instead up my veggie intake a bit and this is such an easy way to do it.
And let me just be clear, I am in no way cutting out fruit from my diet (as these photos perfectly illustrate), I am simply trying to cut down on my sugar intake in general and eat more veggies and more healthy fats. I have been struggling with my energy levels for a while now (I am constantly tired!), so I am experimenting a bit with my diet to hopefully help me feel more balanced and energized. Because of this I have mostly been having green smoothies without any fruity toppings lately, but I gotta have my colorful fruity bowls once in a while as well ♥

Ingredients – 1 serving:
2 deciliter (equals 0.8 cup) chopped frozen cauliflower
2 deciliter (equals 0.8 cup) raspberries, fresh or frozen
1 deciliter (equals 0.4 cup) blueberries, fresh or frozen
1 tablespoon maqui powder – optional
1 tablespoon peanut butter or almond butter
1/2 teaspoon pure vanilla powder
Almond milk to blend
Simply add everything to a blender and pulse until smooth. Pour the smoothie into a bowl and add your favorite toppings. I served mine with homemade granola (recipe will be in my upcoming cookbook), strawberries, peach, passionfruit and bee pollen ♥
