Whenever the sun is shining and we finally get some warmer weather here in Denmark, then I find myself craving light and colorful meals full of veggies and fruit – okay I often do, but even more so in the summer! ;) I have found 4 vibrant recipes from some of my favorite bloggers that I want to give a try this weekend. They are all colorful and full of goodness + they’re all plant based (except for the honey in the peanut sauce, but that can easily be replaced), so pretty much everyone should be able to enjoy these beautiful rainbow recipes! ♥

First up we have these gorgeous rainbow roll-ups, how good does these look?! I absolutely LOVE these kind of wraps, but I am awful at making them – mine pretty much always falls apart, I definitely need to work on my technique! And now I have the perfect reason to do so, I think I will give these a try for dinner tonight. Let me know if you have any tips or tricks when it comes to the wrapping technique ♥

How good does this colorful salsa with roasted corn by Deliciously Ella look?! YUM! It is the perfect side dish for summer barbecues and it would work great in tortillas as well like Ella perfectly suggests. I am so excited to try this one, I have yet to meet a salsa that I did not like ;)
