Chickpea mini pizzas with figs and goat cheese
TGIF! The weekend is finally here! I might be self-employed, but I try to stick to a regular schedule and work hours (except I tend to work until way too late), so a little break is much needed. I had plans to run lots of errands this weekend and take care of all those boring, but necessary things that I always postpone, but I have gotten sick, so I am just going to stay on my couch with lots of blankets, tea and Netflix – doesn’t really sound too bad huh?
Any tips and tricks on how to quickly get over a bad cold, sore throat and nausea would be very much appreciated – right now I am counting on my favorite tea, matcha lattes, nasal spray, cough drops and pain killers to get me through the weekend. Hopefully it will be all gone by monday!
Anyways, enough about that, what I really want to talk about are these yummy mini pizzas that I made the other day. Are you ready for it? These mini chickpea flour pizzas are gluten-free, plant based/vegan (not the toppings, but you can easily adapt those to your liking), high in protein, iron and fiber + last, but certainly not least – they are beyond easy to make and so delicious! ♥

Ingredients – 6 mini pizzas:
2 deciliter (about 0.8 cup) chickpea flour
2 deciliter (about 0.8 cup) water
1/3 teaspoon sea salt
1/2 teaspoon onion powder
1/3 teaspoon garlic powder
1/2 teaspoon dried rosemary
Suggestions for toppings:
Freshly ground pepper
Simply add all the ingredients for the chickpea mini pizzas to a bowl and whisk them together. Set the bowl aside and allow it to rest for about 30 minutes, so the chickpea flour can absorb the water.
Preheat your oven to 220 c / 440 f. Heat a large pan (medium/high heat) and add a little olive oil, pour a circle of the batter onto the pan and cook the mini pizza for about a minute or two until little bubbles start forming in the batter, flip it and give it another minute. I am usually able to fit 3 mini pizzas at the pan at a time. Repeat until you have used all the batter.
Place the mini pizzas on a baking tray lined with parchment paper and add your toppings of choice. I topped mine with goat cheese, fresh figs and red onion. Bake the pizzas for about 5 minutes or until the cheese have melted. Before serving I added arugula, pomegranate seeds and freshly ground pepper. Enjoy ♥
