Vibrant grilled peach salad
Evening lovelies! I am spending the weekend with my family in my parents’ little vacation house by the beach, so I am just quickly stopping by to share this delicious grilled peach salad with you guys. I gotta get back to doing nothing but eating, drinking, talking and going for walks along the water asap – you know, all the important things in life ;)
Anyways, back to the salad! I have been so excited to share it with you guys, it is so vibrant, summery and bursting with flavor, but still super simple and easy to quickly throw together – definitely one of my summer favorites! ♥

Ingredients – 2 servings:
2 handfuls mixed salat
50 grams of goat cheese
2 tablespoons pinenuts
1-2 handfuls blueberries
1 tablespoon oliveoil
1 tablespoon balsamic vinegar
1/2 tablespoon honey
Salt + pepper to taste
Start by pre-heating a grill pan to medium/high heat. Remove the pit from the peaches and cut them into wedges. Lightly brush the peach wedges with a little bit of olive oil and place them on the pre-heated grill pan. Grill them for 1-2 minutes on each side.
Lightly toast the pine nuts on the grill pan with a sprinkle of sea salt for a couple of minutes or until they become fragrant.
Arrange the grilled peaches on the mixed salad and top it with the goat cheese, blueberries and the lightly toasted pine nuts. Whisk together the dressing ingredients and drizzle it onto the salad.
