Easy everyday food // Baked potatoes with pesto, spicy chickpeas and arugula

Morning lovelies! It is time for another post in my ‘Easy everyday food’ series, where I share super easy meals that I usually find too simple to feature here on the blog. It is those kinds of meals that usually ends up saving the day when I am stressed, tired and strapped for time, so I hope you might find some inspiration in them for those kind of days as well

I spent most of last week sick in bed, so I mostly had lots of oatmeal, smoothies and leftover homemade pizza to eat, but I am one of those people who never loses their appetite or love of food when I get sick, so after a while it got boring and I had to switch it up. I was feeling really unwell though, so I didn’t have the energy for anything too complicated, which is why I made these super easy baked potatoes filled with pesto (store-bought to make it even easier), arugula and crunchy spicy chickpeas – such a delicious, filling and satisfying meal that didn’t take me more than 10 minutes to prep!

Baked potatoes
Start by preheating your oven to 200 c / 400 f. Then wash and scrub your potatoes and cut a deep x into each of them. Rub them with a little olive oil and sprinkle them with sea salt and pepper. Bake them in the oven on a rack lined with parchment paper for 45-60 minutes or until the potatoes are done – the baking time depends on the size of the potatoes.

Fill the potatoes with pesto (I used a store-bought one with bell pepper and parmesan, but you can find some of my pesto recipes right here!), arugula and spicy chickpeas (find the recipe below), serve the potatoes right away while they are still warm. Enjoy! ♥

Spicy chickpeas
1 can of chickpeas, drained, rinsed and dried
1 tablespoon olive oil
Your spices of choice – I used a mix of 1/4 tsp cayenne pepper, 1 tsp paprika, 1/3 tsp garlic powder, 1/2 tsp onion powder and 1/2 tsp ground cumin

Simply preheat your oven to 200 c // 400. Add the drained and rinsed chickpeas to a bowl, add the olive oil and toss them until they are coated. Add your spices of choice and mix until the chickpeas are covered in the spices. Add them to a baking tray and bake them for about 25-30 minutes. Enjoy!
