Fudgy almond butter brownies with date caramel and dark chocolate
TGIF! I am so excited the weekend is finally here! I know I have often shared how having my own business means that weekends doesn’t really matter much anymore since I pretty much work every day, but I am trying to change that. I really miss having a more regular work week, where I work from 8-17 and then take the evenings off and where I can feel excited about the weekend.
So from now on I will try to stick to regular work hours, sometimes I will of course need to work more, but if I just spend my work hours being completely productive, then it should be possible. I started this week and while I am a bit tired from getting up earlier (I still need to work on my bedtime, I stay up until way too late), then I am already enjoying my new routine and I have been so excited about the weekend!
Tonight I am just going to stay in, but I have planned a night of self-care with face masks, doing my nails, eating homemade pizza, drinking wine and eating a slice of these beyond delicious brownies + my favorite chips (sea salt and vinegar) while watching the new episodes of Grey’s Anatomy – it does not get much better than that! ♥
I made these indulgent fudgy brownies with date caramel yesterday and they are just too good! I actually used the date caramel recipe from my cookbook for these, it is a must try! I use it as a topping for all kinds of desserts and it is also beyond delicious on oatmeal or as a dip for fruit slices if you are looking for a healthy dessert.
Ingredients – 9 slices:
2 deciliter (about 0.8 cup) buckwheat flour
o.5 deciliter (about 0.2 cup) cacao powder
1.5 deciliter (about 0.6 cup) pitted dates
1 deciliter (about 0.4 cup) almond butter
50 grams dark chocolate, chopped
1 deciliter (about 0.4 cup) coconut sugar
1 deciliter (about 0.4 cup) almond milk
1 teaspoon pure vanilla powder
¼ teaspoon sea salt
1 deciliter (about 0.4 cup) pitted dates
3-4 tablespoons almond butter
2 tablespoons pure maple syrup or akacia honey
1⁄4 teaspoon sea salt
1 deciliter (about 0.4 cup) plantmilk
Start by preheating your oven to 175 c / 350 f. Then simply add all the ingredients for the date caramel into a food processor and pulse until smooth. Pour the caramel into a jar and set it aside.
Add all the brownie ingredients to the food processor (no need to clean it from the caramel first) and pulse until smooth. Grease a pan with a little oil and pour the batter into the pan (I used one that is 20 x 20 cm). Top the brownie batter with a couple tablespoons of the date caramel and use a knife to swirl it around.
Bake the brownies for about 25 minutes, but keep an eye on them, the baking time might vary from oven to oven. Let it rest for 15-20 minutes before cutting it into 9 brownie slices, top it with a bit of the date caramel, chopped dark chocolate and it is ready to be served, enjoy! ♥
