Healthified almond butter cookies

Healthified almond butter cookies

It is the same thing every year, but I still have a hard time adjusting to the cold and gloomy weather of autumn. To try and make the transition from summer to autumn a little easier, I have been baking lots of cookies to enjoy under my blankets with a cup of tea and my favorite Netflix shows (or a Harry Potter book) and it has certainly been working – I am still not too keen on leaving my little blanket fort to go outside i though ;)

One of my current favorite cookie recipes are for these healthified cookies with almond butter, coconut sugar and cinnamon, they are so quick and easy to make, gluten-free, refined sugar-free and just absolutely delicious!  ♥

Directions:
Start by preheating your oven to 175 c / 350 f. Then simply add all the ingredients to a bowl and mix them well together. Roll the cookie dough into 9 balls and place them on a baking tray lined with parchment paper. Press them flat and cookie’like before placing them in the oven and them for about 18 minutes or until they are lightly golden. Serve the cookies warm with lots of tea, enjoy! ♥
