Green banana pancakes with raspberry chia jam, bee pollen and blueberries

This colorful and beyond delicious breakfast platter is one of my go-to’s when I want to spoil myself a little, but still keep it healthy. I made this batch last Sunday as a very late breakfast to enjoy on the couch while binge watching the new season of Grace and Frankie = the perfect Sunday!

The recipe is based on my all time favorite banana pancake recipe, but I have added a little extra color and nutrition in the form of spinach and hemp seeds and I definitely have a new favorite! I just love how green and vibrant the spinach makes them (you can’t even taste the spinach, they are still sweet!) and the hemp seeds adds a hint of a nutty flavor that is just so delicious ♥

Ingredients:
– Yields 8 pancakes/2 servings
2 bananas
4 eggs
2 large handfuls spinach
1 teaspoon pure vanilla powder
1/2 teaspoon baking powder
2 tablespoons hempseeds – optional
2 deciliter (about 0.8 cup) rolled oats

Raspberry chia jam
3 deciliter (about 1.2 cup) raspberries (frozen are fine)
1/2 teaspoon pure vanilla powder
1 tablespoon honey – adjust amounts to your liking
1 tablespoon chia seeds

Toppings:
2 handfuls blueberries
2 passion fruits
2 tablespoon bee pollen

Directions:

Chia jam: Start by making the jam by simply adding all the ingredients – except the chia seeds – to a saucepan and bring it to a slow boil. Let it simmer for a couple of minutes, mash the raspberries a little, add the chia seeds and set it aside to cool slightly.

Pancakes: While the chia jam simmers you can make the pancakes by simply adding all the ingredients to a blender and pulse until smooth. Heat a non-stick pan – I prefer to make them on high heat – and add a little coconut oil. When the oil has melted pour a circle of the pancake batter onto the pan. Cook the pancake for a couple of minutes until it is golden brown – flip it – and give it about a minute on the other side. Repeat until you have used all the batter.

Serve the pancakes with the chia jam, blueberries, bee pollen and passion fruit, enjoy! ♥
