Happy Halloween lovelies! Are you celebrating? Or is Halloween not really a thing where you live either?

I had planned to go all out on Halloween treats, movies and such, but I ended up simply feeling too tired to make much of a fuss, so I have just been relaxing in my bed all evening while watching Youtube videos and eating the chocolate I bought for the trick & treaters who never came. Not a bad way to spend the evening to be honest ;)

I didn’t share any new Halloween recipes this year as the ones I had planned didn’t really turn out the way I had hoped, but I do have something even better for you guys – these beyond delicious pumpkin donuts that I have been teasing you guys with over on Instagram! I am sorry that it took me so long to post the recipe, but I struggled so bad with these photos as it was too dark and gloomy to take them during the weekend as I had planned.

Healthified baked pumpkin donuts with warming spices

Ingredients:
– Yields 8 donuts
1 egg
2 deciliter (about 0.8 cup) pumpkin puree
1/2 deciliter melted coconut oil
2 deciliter (about 0.8 cup) coconut sugar
2 1/2 deciliter (about 1 cup) oat flour
1 tablespoon pumpkin spice
1/2 teaspoon pure vanilla powder
1/3 teaspoon sea salt
1 teaspoon baking powder
1/2 teaspoon baking soda

A donut pan – I used this one (affiliate link)

Toppings:
Sugar glaze
Pumpkin seeds
Dried blue cornflower
Dried

Healthified baked pumpkin donuts with warming spices

Directions:

Start by preheating your oven to 175 c / 350 f.

Then simply add all ingredients to a bowl and stir until everything is properly mixed together. Grease the donut pan with a little bit of coconut oil and add the dough, leave a little space in the moulds for the donuts to rise – a couple of millimeters should be enough as we want the donuts to rise above the mould to get that perfectly rounded shape.

Bake them in the oven for 18-20 minutes, but make sure to keep an eye on them as baking time can vary depending on your oven. When the donuts are done set them aside to cool a little before removing them from the pan.

Make sure to let the donuts cool completely before adding the sugar glaze and toppings – I recommend sneakily trying one of the warm donuts while you wait for the others to cool, enjoy! ♥
