Pink coconut lattes with dragon fruit & vanilla
This is probably the girliest recipe I have ever done and I am LOVING it! I mean, how cute are these pink coconut lattes?! And so delicious, warming and soothing as well ♥
They are my new go-to at night when I want something warm and cosy before bed, but want to avoid the caffeine that are in my favorite matcha lattes. I have been experimenting with colorful caffeine free lattes – or moon milk as some like to call them – for a while now and these bright pink ones with a taste of coconut, dragonfruit and vanilla are my favorite ones. They taste like dessert in a mug and I just love how well the flavors go together!
If you are not into anything too sweet, then I would recommend that you leave out the medjool dates though – because while these lattes are the perfect treat for my sweet tooth, then I understand they might be a bit much for some of you.

-Yields 2 servings
5 deciliter (about 2 cups) milk, I used oat milk
1/2 teaspoon pure vanilla powder
2 medjool dates, pitted
1-2 tablespoons pink dragonfruit powder
1/2 – 1 teaspoon ashwagandha – optional
2-4 teaspoons coconut butter, adjust to your taste
Start by heating up the milk and then add it to a blender along with the rest of the ingredients and pulse on high speed for a minute or two. Pour into two mugs and serve right away, enjoy! ♥
