Superfood granola with cinnamon and ginger

As you have probably noticed I absolutely love making my own granola and I am always trying new recipes and flavor combinations. It is beyond easy to make yourself and it can not only help you save money, but homemade granola often taste so much better than the store-bought ones as well + when you make it yourself you know exactly what is in it – no added nasties! This superfood version is made with a little bit of everything from my many mason jars filled with goodies, but you can easily swap out some of the ingredients if you do not have them. I spiced this batch a little with cinnamon and ginger, but I absolutely love to combine cinnamon and...

This delicious pumpkin spiced apple granola was one of the first recipes I created using my homemade pumpkin spice mix, haha and I have since used for pretty much everything so be prepared for a lot of pumpkin spiced recipes! This is definitely one of my favorites though, I love adding it to my green smoothie bowls (recipe here and here) in the morning for some extra crunch and sweetness, so delicious and filling! ❤︎ Find more granola recipes right here! No-bake granola bars with dates and peanut butter

Hi lovelies, happy weekend! Are you guys doing anything exciting? I am actually working tomorrow (big surprise!), but it is something quite different from what I am used to (think camera crew, other bloggers etc.), so I am a bit nervous! Hopefully the result will turn out to be amazing though, I can reveal that it is something for the blog, so I will share the result with you guys soon! Anyways, enough about that for now (haha it makes me nervous just thinking about it!). Today I want to share one of my go-to snack recipes with you guys. I have actually already posted a couple of other versions of these yummy date based granola bars, but they are a...

Healthy parfaits with strawberry/rhubarb compote and homemade granola

Well I told you that you would be seeing a lot more of my strawberry/rhubarb compote didn’t I? ;) I still have so many rhubarbs left from when I visited my parents and this compote is one of my favorite ways to use it, it is so delicious, super easy to make and can be used in so many different ways! This time I used it in these beyond delicious dessert (or breakfast?) parfaits! I made two different kinds, one with vanilla “cream” and one with vanilla chia pudding – I know some of you aren’t too fond of chia puddings, so I thought I would give you an alternative. These little parfaits are surprisingly filling, so I love to have...

Quick breakfast ideas + banana/cinnamon granola recipe

Sponsored. This post is made in collaboration with Valio – taste which is offered completely lactose-free Morning lovelies, are you ready for some breakfast inspiration? You know how much I love my breakfast and I always make it a priority no matter how busy I am. However, on some mornings I simply do not have the time to make anything too elaborate and then I always make sure to have a delicious, healthy and super easy breakfast option on hand. This is for example the case on the days where I have to shoot a lot of recipes. I only work with natural light, which means that for every hour passing I am quickly loosing daylight, so I have to get up early and cook...

Tropical granola with pineapple and coconut

Hi lovelies, are you enjoying your weekend? If you have som extra time, then I have a little weekend project for you. Breakfast parfait with chocolate chia pudding, peanut butter, homemade chocolate granola and vanilla skyr

This multilayered breakfast parfait is so indulgent and delicious, but is actually only made with all healthy ingredients and makes for the perfect super filling breakfast. The rich flavors of the chocolate chia pudding and peanut butter goes perfectly with the freshness from the vanilla skyr and the added crunch from the chocolate granola – I am telling you, this is so good!! You can find the recipe over on the Danish fashion magazine Costume’s website, where I each tuesday share a new recipe: Find the recipe right here ! The article is in Danish, but you can easily use an online translator (e.g. just copy-paste the recipe into Google Translate) and if you have any problems, then just let me know and I will help...

Spoil yourself // Granola with peanut butter and chocolate

Granola is one of my favourite things to add to my breakfast, it is beyond delicious, super easy to make, inexpensive (when you make it yourself), filling and I love the added crunch to my smoothie bowls, yoghurt etc. The granola I usually make are a healthy version made without too much added sugar or fats (just a little honey or coconut oil), but sometimes I am in the mood for something a little more indulgent and we should all remember to spoil ourselves a little from time to time right?! ;) This granola with peanut butter and dark chocolate is my absolute favourite granola to make when I want the “luxury” version of granola, it tastes super indulgent, but the fat...

Healthified granola bars

Some of the most popular recipes on the blog are for treats and snacks and while I have been sharing quite a few recipes for treats and desserts lately, then I just discovered that it has been ages since I have posted a proper snack recipe, so I think it is about time I change that! I experimented with these healthified granola bars before leaving for LA and I absolutely love how they turned out – they’re so much healthier than those store bought granola bars, but they are still so delicious and quite sweet actually because of the banana, dried berries and honey. I love to snack on them if I get hungry between meals (which I always do) or when I am on...

Fall spiced cacao granola

Fall has arrived and while I will admit that it is a bit cosy with all the sweaters, tea etc. then I am not really a big fan – at least not as long as I live in Copenhagen where fall means rain, wind, cold and darkness. However, since I will be leaving for LA very soon now and I know that I will be spending two months under warmer skies, then I am starting to appreciate fall a little more – haha but only because I know I will escape this shitty weather! AND most importantly because I will be spending october in LA aka. the month of HALLOWEEN!! I am obsessed with Halloween, but we do not celebrate it here in...

No-bake granola bars with berries, coconut and vanilla

These granola bars with berries, coconut and vanilla are my absolute favorite snack at the moment. They are made with all healthy ingredients, are super easy and quick to make + they taste absolutely amazing! I seriously cannot recommend these enough, I always make a lot of different no-bake granola bars based on this recipe, but this flavor combo is definitely one of the best I have come up with so far :D I have created the recipe for the Danish magazine Costume and you can find it over on their website, where I each tuesday share a new recipe. Find the recipe right here! The article is in Danish, but you can easily use an online translator (e.g. just...

Granola madness // 7 healthified granola recipes

As you might have noticed I am such a big granola fan, I absolutely love to eat it on my smoothie bowls, my skyr/greek yoghurt or just as a cheeky little snack (it is way too tasty to leave alone) and I usually try to make a fresh batch every week. I really love making my own granola since it is super easy to make, it is much tastier than the store bought ones (in my opinion at least), you can get the exact flavor combos you want and you control exactly what goes in there = no added nasties and you can really cut back on all the fat and sugar that are usually in the store-bought ones. I have experimented...

Breakfast wraps with peanut butter, homemade chia jam, honey toasted granola and more

Okay so many of you have probably noticed that I tend to get quite obsessed with things and this new post contains not just one, but two of my newest obsessions – peanut butter and these super yummy breakfast wraps! I have been putting peanut butter on everything lately (as you might have noticed in my recent recipes) and this newest creation is one of my absolute favorites! It is a twist on the american classic PB and jelly sandwich, but healthified and with a better nutritional profile. Ahh this is so good, haha I wish I had one right now! You have to give it a try, I promise you that it is so tasty and super filling! I have...

Peanut butter nice cream with peanut butter granola

This peanut butter nice cream with peanut butter granola (yes my peanut butter obsession is real) is a new favorite breakfast of mine for those mornings where I want to spoil myself a little extra. Haha and let me just start by saying that I know that it is a quite sad looking nice cream I have here, I wasn’t satisfied with the first photos I took and then by the time I had taken these the nice cream was already quite melted. Maybe I should just call this a peanut butter/banana smoothie bowl instead, but either way, it tasted absolutely amazing and that’s all that matters right? :D Also, some of you have been asking me about my Q&A,...

Pink breakfast parfait with peanut butter granola, kiwi and goji berries

Peanut butter granola

I have recently discovered that I actually like peanut butter after years and years of avoiding it like the plague. The first time I tasted peanut butter it was one of those cheap junk versions with lots of added nasties (and probably not too many peanuts) and I just hated the flavor and texture, it felt like it was growing in my mouth. I still remember the experience and flavor all too well and so I didn’t eat it again for years. However, last month I decided to give it another try and this time I bought an organic one with nothing but peanuts and a little sea salt and as it turns out I actually like it!! Haha I am stupidly excited...

Raw superfood granola bars

As I wrote in this post, muesli/granola bars are one of my absolute favorite snacks to bring with me when I am in a hurry or when I have to eat on the go, but unfortunately the store-bought granola bars are often full of processed sugar, unhealthy fat and other nasties. While it is possible to find store-bought granola bars that are actually organic, unprocessed and healthy, they are usually super expensive and since I am on a somewhat limited budget I prefer to make my own. These homemade granola bars are tasty, super filling, full of nutrient packed superfoods and the best part is that you know exactly what is in them – no added nasties! With this recipe you can add whatever seeds, nuts and dried fruit that you like and have...

The “secretly” green smoothie bowl and coconut granola

It has been a while since I have posted a smoothie bowl recipe on here and you know that we can’t have that! ;) So to make up for it I bring you the recipe for a “secretly” green smoothie bowl, perfect for those who are not quite ready for green smoothies yet. This smoothie contains both spinach and avocado, but you can neither see it nor taste it because of the berries, so if you want to ease into green smoothies then this could be a good start. And as you know a smoothie bowl just isn’t the same without toppings, so I made some coconut granola to add a little extra sweetness and crunch and it turned out so good!...

Chocolate crunch granola

I love making my own granola and muesli and I am always trying new recipes and flavor combinations, it is so easy to make yourself and it not only saves you money, but homemade muesli/granola often taste much better than the store-bought ones and when you make it yourself you know exactly what is in it. This chocolate crunch granola is one of my favorite granola recipes at the moment, it is so tasty and super simple to make, but it is also a little indulgent so I like to call it my dessert granola even though I have been sneaky and enjoyed it for breakfast several times this week – haha I mean is there a better way to start your morning...

Eat the rainbow // Raspberry smoothie bowl and 10 minute granola

Eat the rainbow <3 I know I say it all the time, but just look at these goodies – not only bursting with nutrients, but so beautiful as well. It honestly makes me happy to look at all these fruits and colors, it is hard to be in a bad mood when you start the day like this! I must admit that I often start my days with plain oatmeal as well though, sometimes I need that extra sleep more than I need rainbows ;) Raspberry smoothie bowl Simply blend 1 banana, 1 cup raspberries, 2 tablespoons goji berries, a little acai powder (optional) and almond milk – how much depends on you blender, I only add just enough for it to...

Berry smoothie bowl w. basil and hidden greens

This fresh and colorful berry smoothie bowl is a new favorite of mine, it is full of hidden greens, but is still nice and sweet because of the berries + the basil really adds a little something extra! There are both frozen broccoli and spinach in there, but I promise that you cannot taste it – I served it to my mom this morning (without the basil though) and she had no idea that it was full of greens, haha she almost didn’t believe me when I told her ;) Find more smoothie bowl recipes right here! Ingredients: 1 cup (2-3 deciliters) mixed frozen berries 1 handful frozen broccoli 1 handful spinach 1 banana, ripe w. brown dots 1 tablespoon hemp seeds 1...

Homemade foodie gifts – updated version

Morning lovelies! Christmas is almost here and I am so excited! Later today my sister and I are going to our parents place for the Christmas holidays and I just cannot wait! Beet ‘n raspberry rainbow bowl

Is there a better way to start the day than with one of these colorful smoothie bowls?! I cannot be anything but in a good mood when I eat one of these and I feel so energized and full afterwards as well – definitely a favorite of mine! A while back I needed to buy beetroot dust (dried and blended beetroot) for a magazine foodie shoot I was working on, but by mistake the heath store employee gave me a jar of beet crystals instead. I didn’t work that well for the shoot (we managed though), but the crystals are absolutely perfect for adding to my smoothies and chia parfaits, I am obsessed! Not only is it super healthy and nutritious, but...

Kefir superfood breakfast

Sponsored. This post is made in collaboration with Valio – taste which is offered completely lactose-free. Morning lovelies! I am sorry about the lack of updates last week, my sister and I went on quite an impulsive trip to London to do some Christmas shopping (haha and a lot of regular shopping) and to just enjoy how pretty the city is during Christmas while eating a ton of good food! We definitely went a little overboard at lunch and dinner with 2-3 courses each time (pure bliss), but our breakfasts most days were quick and quite horrible as we just wanted to get out of the apartment and explore London without wasting too much time. As you know breakfast is my favorite meal, so I of...

Today I want to share one of my favorite go-to breakfasts, it is healthy, beyond delicious, super easy to make and filling as well. Treat yo self! Breakfast for champions

I think it is very important to remember to “Treat yo self!” as Tom and Donna would say (any Parks & Recreation fans out there?) and while they do it in a quite extravagant way, then there are much more simple and inexpensive ways to treat yourself once in a while. Haha I do like the way they do it though, if I hadn’t just bought a new apartment I would totally do the same! Buut I need to be all sensible and shit with my money right now (so boring) and so I am treating myself in more affordable manners and let me tell you, it definitely ain’t bad! One of my favorite splurges are fresh flowers and especially peonies! I am quite good...

Healthified apple trifle aka. æblekage trifli

Hi lovelies, I hope you have had a great weekend? I have certainly enjoyed mine, I have been eating so much good food, I have spent time with family and friends, I have been to the cinema (The Big Short), I have been watching some of my favorite tv-shows (Vikings and Black Sails) aaand I have been working as always, but it really isn’t that bad when you love what you do and you are your own boss. This friday I made these apple trifles for my cousin and I, they are inspired by the Danish dessert æblekage, but it is a healthified version of it since I don’t really like the real deal. This one is so good though...

12 colorful, healthy and beyond delicious smoothie bowls

Are you guys ready for some major smoothie bowl inspiration? This post is all about my favorite smoothie bowl recipes, so you are in for a lot of colorful nutritious bowls of goodness! Since I always get a lot of questions about smoothie bowls then I thought I would start this post with a little what, why and how on smoothie bowls aka. a quick little smoothie bowl 101. What? A smoothie bowl is simply a (very thick) smoothie that you eat from a bowl with a spoon instead of drinking it. Haha I know it is kinda obvious, but I actually get a lot of questions about this on instagram and tumblr, so I thought I would clarify exactly what...

Energizing green matcha smoothie bowl

Hi lovelies! I am just stopping by to share one of my new favorite breakfast recipes with you. I love how quick, delicious and nutritious smoothie bowls are, it’s the perfect start to the day if you ask me! And this one kinda take it to the next level with the added matcha for a little energy boost (I don’t drink coffee) and the avocado for some healthy fats to help you stay full longer. I love that with smoothies I can add greens to my breakfast, but still have something that is sweet and breakfast’ish – I know a lot of people love their savory foods in the morning, but I’m just not one of them, avocado toast excluded...

Quick and healthy tropical breakfast

Hi lovelies, I hope you are doing great and that your year is off to a great start ❤️ Personally I am struggling a bit with getting back into a proper routine, I have been eating too much unhealthy food and treats, I haven’t been working out and my sleep pattern is so messed up! I always let go and just enjoy myself during the Christmas holidays/New years, but then get back on track with my healthy lifestyle in January, it just haven’t been going as easily as usual this year. Before we say our final farewell to 2015, then I would like to look back on the year and share the 10 most popular (aka. most viewed) recipes from 2015 with you. There are so many of my personal favourites among these and it is nice to know that you appreciate the same kinds of recipes as I do. Haha though sometimes I can make something that I absolutely LOVE and then it gets absolutely no views or feedback, which can be a little frustrating when you personally feel like it is some of your best work, so its good to see that at least we’re on the same page most of the time ;) Not very surprisingly last years favourites counted a...

12 delicious (and healthy) snack recipes

Are you ready for some delicious and healthy snack ideas?! Healthy snacks are ones of the things I get the most requests for and I definitely get why, it can be really hard to find healthy snacks and we all know what happens if we get hangry and there are no healthy snacks around right? ..haha okay okay maybe it’s just me, but I pretty much turn into a human trashcan (so charming I know) that eats whatever I can get my hands on when I get too hangry and I will not care whether it is healthy or not – hence, healthy snacks are super important to have on hand to steer clear of those not so healthy options! ;)...

Chia pudding breakfast prep // Having time to do what you want

Sponsored. This post is made in collaboration with Valio – lactose-free dairy products. Many of you often ask me how I find the motivation and time to stay healthy, which to be honest isn’t something that I always do, both because I find it important not to be too strict with my diet, but also because I get stressed and busy and cave in to temptations just like everyone else. However, for those stressful days where there isn’t much time for food, then I have some go-to meals that can be prepped in advance, which always saves me a lot of time and ensures that I still get to enjoy good nourishing food. One of my go-to meals is my beloved chia pudding – it’s beyond...

Matcha chia pudding

This super easy breakfast combines two of my favorite things – chia puddings (see all my chia pudding recipes here!) and matcha! Since I don’t drink coffee I am completely obsessed with matcha and maca for a much needed energy boost these days! I mostly just add maca to my smoothies or healthy treats and the same goes for matcha + I of course drink it as matcha tea, but I have been trying to find new ways to incorporate these energy boosting super foods into my diet and one of them are chia puddings! There are so many pros to chia puddings; they taste great, they are super healthy (see my post on chia seeds and their health benefits right here),...

Quick breakfast ideas for early mornings

I have gotten quite a few requests for some quick breakfast ideas for those mornings where there isn’t quite time for pancakes or fancy smoothie bowls, so I thought I would share my go-to breakfasts for when I am in a hurry. In the pictures you see my favorite breakfast for time-strapped early mornings, I might have prettied it up for the pictures, but this breakfast bowl of skyr really is as simple as can be and you can always just use whatever toppings you have available. Skyr is an icelandic dairy product that is low in fat and high in protein, but it can be a bit hard to find outside scandinavia, so it can easily be subbed for quark, greek yoghurt or...

Timekeeping // Acai bowls

“Try to imagine a life without timekeeping. You probably can’t. You know the month, the year, the day of the week. There is a clock on your wall or the dashboard of your car. You have a schedule, a calendar, a time for dinner or a movie. Yet all around you, timekeeping is ignored. Birds are not late. A dog does not check its watch. Deer do not fret over passing birthdays. Man alone measures time. Man alone chimes the hour. And, because of this, man alone suffers a paralyzing fear that no other creature endures. A fear of time running out.” – Mitch Albom, The Time Keeper Acai bowl recipe – 2 small servings: Simply blend 3 bananas, 1.5 cup...

Hello lovelies, it is sunday once again which means that it is time for `Superfood Sunday´ and yet another post on one of my favorite superfoods – this week it will be all about the acai berry! If the term superfood is new to you I would recommend reading my first post in the series, which focuses on superfoods in general – find it right here. Also make sure to check out my previous posts on chia seeds, maca, blueberries, broccoli and goji berries. The acai berry is an antioxidant-rich fruit from acai palm trees in Central and South America. The berry is pronounced “ah-sigh-ee” and is small and round with a dark purple, almost black color and is often described as a mix between a blueberry and a grape. The...

Simple strawberry smoothie bowl

“Life is really simple, but we insist on making it complicated.” – Confucius   I am the master of making life unnecessarily complicated and today is just one of those days where everything is a bit of a mess. On days like this it can be hard to find the energy for complicated recipes so I want to share this simple-as-can-be smoothie bowl recipe with you lovelies. All you need to make this are 1.5 cup frozen strawberries, 2 bananas, a little stevia and water to blend. I could not resist getting a little fancy schmancy, so I topped it with blueberries, raspberries and goji berries, but the good thing about smoothie bowls are that you can pretty much top them with whatever fruits, berries,...
