I love making traditional danish christmas treats for my family and I, but sometimes it is nice to mix in some healthier treats as well and these chocolate covered nutty dates are definitely a new favorite. I am so into making raw treats lately, I love that they are so healthy and easy to make and yet they still taste absolutely amazing! Simply cut a watermelon into slices as pictured and drizzle it with raw chocolate (recipe below) + your toppings of choice. Bliss balls and dessert balls are some of my absolute favorite treats, not just because they’re super delicious and easy to make, but also because I love that they’re bite sized so I can sneakily munch on a couple of them throughout the day when my cravings kick in (unlike cake and such where you usually have a bigger, but single serving). I always try to keep a batch on hand at all times to help me keep my sugar and dessert cravings in check. Neapolitan ice cream smoothie

This three layered beauty is my take on a healthified and nourishing version of the neapolitan ice-cream. It might be a healthy version, but I promise you that it is still incredibly delicious and is such a great alternative to your regular ice-cream if you want to keep it healthy – haha sometimes you just need the real deal though ;) If you use frozen bananas and strawberries + only add very little milk then you get a thicker nice cream version that you can eat with a spoon and that is even closer to the original neapolitian ice cream. These super cute little apple rings are one of my go-to´s when I want an easy and healthy snack. Haha and I know they kinda look like donuts from above, but you’ll be disappointed if you expect anything even remotely donut-like ;) They are super tasty though, I love how the fresh crisp apple’s goes with the indulgent date caramel, peanut butter and vanilla cream and then there’s a little added crunch from the nuts, dark chocolate and raw coconut chips – so good!! Pancakes are on of my absolute favorite things to have for breakfast, I mean they are beyond tasty – almost like dessert for breakfast – and it just feels like such a little everyday luxury to have the time spoil myself with a nice big stack of healthified pancakes! As you might have noticed I am such a big granola fan, I absolutely love to eat it on my smoothie bowls, my skyr/greek yoghurt or just as a cheeky little snack (it is way too tasty to leave alone) and I usually try to make a fresh batch every week. I have recently discovered that I actually like peanut butter after years and years of avoiding it like the plague. The first time I tasted peanut butter it was one of those cheap junk versions with lots of added nasties (and probably not too many peanuts) and I just hated the flavor and texture, it felt like it was growing in my mouth. Christmas is getting so close and I am super excited! I have been so excited to share this brownie recipe with you as it is one of my new favorite desserts! I originally made these little summery bowls for breakfast a while back, but I have since been serving them as a light and healthy alternative to dessert, which has been perfect in the heatwave since I have not been craving anything too heavy. My little sister came to stay with me for a couple of days in the beginning of last week, so on tuesday I decided to skip class, sleep in and make a nice breakfast for us to eat under snuggly blankets while watching our favorite TV shows.
