Vibrant grilled peach salad

Evening lovelies! I am spending the weekend with my family in my parents’ little vacation house by the beach, so I am just quickly stopping by to share this delicious grilled peach salad with you guys. I gotta get back to doing nothing but eating, drinking, talking and going for walks along the water asap – you know, all the important things in life ;) Anyways, back to the salad! I have been so excited to share it with you guys, it is so vibrant, summery and bursting with flavor, but still super simple and easy to quickly throw together – definitely one of my summer favorites! ♥ Find more of my favorite salad recipes right here! Pickled radishes – Perfect topping for salads, avo sandwiches + more

As some of you know, I have recently started my own little veggie garden and one of the (many) things that I have kinda miscalculated is just how fast radishes grow! I mean one of my raised garden beds are constantly drowning in radishes that are ready to be harvested (I need to plant wayy less at a time in the future!), so in order to use all of them before they go bad or grow too large, then I have started pickling them. Pickling might sound like a lot of work, but when using this simple method it is super quick and easy, and I just love how amazing they taste in salads or as a topping on my beloved mashed avo,...

Pumpkin fall salad with pomegranate, kale and goat cheese

Fall is here and for the first time ever I am actually excited about it! I think my sister’s love for fall have rubbed off on me, we have been buying crazy amounts of pumpkins (both to eat and for decoration) and lots of gorgeous flowers in orange/red fall colors. I am not too fond of the cold though, but I will admit that there is something cosy about snuggling up on the couch with lots of blankets and a warm cup of tea – especially when it is raining. I have made so many different fall inspired recipes this past week and I cannot wait to share all of them with you guys! The first one I want to...

My favorite summery salad with watermelon, juicy balsamic glazed chicken, feta cheese and much more

Happy hump day lovelies! I cannot believe that I am only just now getting around to sharing this salad with you guys! It has been my absolute favorite salad this summer and my go-to when I have been having guests over – it is always a big hit! I know summer is over, but I wanted to share this yummy colorful salad with you guys anyways, the watermelons are still quite good where I live and I can always use a taste of summer regardless of the season ;) I have a lot of yummy fall salads with more season appropriate produce planned for you guys, but I just had to share this one with you guys first, since it...

Crisp bread with hummus and chickpea curry salad

Sponsored. This post is made in collaboration with Sigdal. I have loved crisp bread since I was a kid and it is still one of my favorites when it comes to a quick and tasty snack, so when I was offered a collaboration with Sigdal, who makes gourmet crisp breads, it did not take me very long to say yes please! I must admit that when it comes to crisp bread, then I usually tend to reach for the same easy and kinda boring toppings (if I even bother to add any). To me it has always been that super easy snack for in-between meals and often on the go, so I have never done much to up my crisp bread topping game, but these...

Summer salad with peaches, pomegranate, bulgur + more

Hi lovelies! I hope you have had an amazing weekend? Mine haven’t exactly been the best to be honest, but there is only 8 days until I am going to LA, so it is impossible for me to be in a bad mood. I am so excited to go back! I can’t wait to explore the city some more and enjoy lots of amazing food + go shopping (haha I always spend too much when I travel to the US) and enjoy the beaches, sunny weather and high temperatures! The weather is pretty shitty here in Denmark again (surprise!), but when eating this colorful summer salad you might be able to forget about the rain for a little while –...

Summer salad with cantaloup melon and prosciutto

This colorful salad with cantaloup melon and prosciutto is so fresh, summery and full of flavor! As you have probably noticed I absolutely love making salads with melon and berries during summer, they just add so much flavor and I am obsessed with combining sweet fruit with salty ingredients like feta or prosciutto – it is just too delicious! ❤︎ You can find the recipe over on the Danish fashion magazine Costume’s website, where I share two brand new recipes every month: Find the recipe right here! The article is in Danish, but you can easily use an online translator (e.g. just copy-paste the recipe into Google Translate) and if you have any problems, then just let me know and I will help you :) ♥ Follow...

Delicious and protein-rich chickpea salad – perfect for mealprepping!

As some on you might have noticed from my snapchat (mokai_giraf) I am completely obsessed with trying new salad recipes at the moment! I have made so many new yummy salads that I cannot wait to share with you guys! Haha a lot of them contains feta (because feta is pretty much the best thing ever), buuut I am trying to make a lot of feta’less ones as well for those of you who prefer that and also just to keep myself from eating crazy amounts of feta all day everyday ;) One of the salads that does contain feta though is this delicious chickpea salad. I love that it is beyond easy to make, full of protein from the chickpeas + it...

Green power salad with homemade basil/wheatgrass pesto

This green power salad is so full of flavor and is absolutely bursting with superfoods and nutrients – it is jam-packed with kale, spinach, quinoa, wheatgrass and so much more! I love how it is filled with greens and good for you ingredients, but still taste absolutely amazing, haha I am so over green power salads that taste like lawn ;) You can find the recipe over on the Danish fashion magazine Costume’s website, where I each tuesday share a new recipe: Find the recipe right here and you can you find the pesto recipe right here as well! Thai mango salad noodles // Guest blogger: Feast with Sophie

Hello lovelies, it is time for the third guest post in my little guest blogging series that will be on the blog weekly while I am on vacation here in LA. This time I have the honor of having Sophie from the blog Feast with Sophie stop by and share one of her favourite recipes. Make sure to check out her blog for more amazing recipes! Hello everyone! My name is Sophie and I share my favourite vegetarian recipes over on my blog, Feast with Sophie. I’m a 26-year-old Canadian currently living in the beautiful Netherlands. Summer salad with berries, quinoa, feta and a raspberry vinaigrette

This colorful summer salad is one of my absolute favorites salads right now, it is so fresh and flavorful and I love how well the sweetness from the berries goes with the tangy and salty feta cheese. I am staying at my parents place for the week for a little mini vacay (I am still working on freelance jobs and the blog, but it’s nice with some new and more peaceful surroundings than in the city) and they have a big garden with a lot of berry bushes, so I am going to make this again, but only with homegrown berries – how lovely is that?! :D Haha I love everything homegrown, but I live in the city with no garden or even...

Kale salad with quinoa, apple, pomegranate and feta

I am finally starting to love eating salads again after feeling a little bored and uninspired with my salads for a long time. I have been experimenting with kale salads a lot lately and this version with the classic combination of apple and pomegranate is definitely a new favorite of mine! As I have shared before, my little sister is not exactly super fond of salads and health food, but she actually really loved this salad as well and even asked for seconds, so I am just going to let that speak for itself ;) Kale salad: 4 cups kale, finely chopped 1/2 cup quinoa 2 apples 1/2 pomegranate 100 gram feta cheese 2 handfuls pecan nuts Dressing: 2 tablespoons olive oil...

Beet and goat cheese fall salad

The weather has finally shifted and it almost feels like we went directly from a crazy summer heatwave and then straight to fall, the weather has been cold and moody all weekend and I absolutely love it! I have never been much of a fall person, but I think that is about to change, this weekend I have cosied up on the couch with blankets, tea, a good book and a little NCIS LA marathon on tv and it has been absolute perfection! As long as it does not get too cold I think I am starting to understand why people love fall so much. Haha but enough of all this weather and season talk, the change in weather put me...

Summer salad with peach, prosciutto and homemade honey/mustard dressing

I have been on a mission to make the most use of my parents garden while staying with them and you have something to look forward to because I definitely think some of the things I have made so far turned out really good! Haha I feel a bit douchey for saying that about my own cooking, but my family really liked it as well so you won’t just have to take my word for it ;) I will share the recipes with you as soon as I have had the time to edit the pictures. Until then I want to share this easy summer salad with you, it is inspired by this salad from Cookie Monster Cooking and it...

Salad with spicy sweet potato, spicy falafels and guacamole

I’m sorry about the lack of updates and frequent use of pictures already posted on instagram, but I have exams at the moment (until the 13th of june) so unfortunately I do not have much time for the blog, but I will try my best to update it whenever I have a little extra time :) This is my lunch from a while back, I love to eat big salads in order to get my daily greens and veggies, but personally salads do not keep me full for very long, so I always try to add something extra to make sure I stay full until my next meal. This salad contains three of my favorite things to eat at the...

Asian inspired spring salad with spicy mango dressing

Salad, yields 4 servings as a side dish: 4 carrots 1 avocado 1 cup edamame beans 4 scallions/spring onion 1/2 mango 2 tablespoons sesame seeds A handful mint and cilantro leaves Inspired by the very talented girls from Plat du jour :) Spicy mango dressing/dip: 1 mango 2 cm. ginger 2 tablespoons sweet chilli sauce Chili powder to taste The juice from 1/2 lime   Directions: I like to start out with the dressing so it can chill in the fridge while I prepare the salad – simply place all the ingredients in a blender and pulse until smooth For the salad: grate the carrots, chop the avocado, spring onions, mango, mint and cilantro, mix in the edamame beans and sesame seeds...

Tropical fruit salad

Hi lovelies! I’m just stopping by with a quick tip to what could either be an idea for breakfast or a healthy dessert, either way it will be the perfect taste of summer in this depressing wintertime (I’m not a fan of all this cold and darkness;)). Recipes I want to try // Warm and filling

Sweet potato lemon grass coconut curry by Deliciously Ella – find the recipe right here! The weather have completely shifted here in Denmark this week and while we never had much summer to begin with, then the shift to fall weather was still so abrupt and brutal – it is so cold (I had to turn on a heater) and it has been raining for 5 days straight! Every time fall arrives I get sick with a bad cold, sore throat, headaches, fewer etc. and as you know this year have been no different, so I have been searching the net for lots of warming recipes to help me get over this annoying cold + to help me get through fall...

My cookbook is finally here // Regnbuemad!

Evening lovelies! I realized earlier today that I have been spamming everyone with news and details about my cookbook on social media, but I have barely mentioned it here on the blog, so it is definitely time to do something about that! For my fellow Danes – you can read much more about the book in Danish right here! And you can buy it right here! My book is called ‘Regnbuemad’ (aka. rainbow food) and it will sadly only be available in Danish for now, which is one of the reasons why I haven’t been promoting it that much here on the blog. I know a lot of you aren’t Danish and from social media alone I have gotten SO many requests...

∼ My favorite summer dress and currants from my parents garden, thank’s dad ♥ ∼ Evening lovelies! It is time for another post in my ‘Lovely little things’ series, I hope you enjoy getting these little glimpses into my everyday life. For me these posts are the perfect opportunity to stop and appreciate those little things in life ♥ This post was actually supposed to be posted last week before I went away on a family vacation to Germany with my parents and sister, but a lot of things came up and I didn’t manage to finish it in time for the trip. While we were away I decided to just pull the plug and relax completely without having to worry about work, so I...

Haha and talking about balance, I might be snacking on strawberries and chocolate as I...

Hosting family dinner – how to properly match food and wine? (w. recipes)

Sponsored. This post is made in collaboration with Hardys Wines. As you have probably realized by now, I am such a foodie and there are few things that I enjoy more than a good meal – maybe except a good meal in good company with some good wine ;) I come from a family who are major foodies and wine lovers (on both sides of the family) and to me there is nothing better than when we get together and enjoy each others company over a good lunch or dinner. While most of my family are very fond of wine and know quite a bit about it, then I must admit that I am still a total wine novice. I only...

January challenge – detox, reset and rewire!

Happy New Year lovelies!! I hope that 2017 will bring you all the love, joy and fulfillment imaginable ❤︎ 2017 has already been off to a quite great start for me – at least health wise and professionally. Homemade foodie gifts – updated version

Morning lovelies! Christmas is almost here and I am so excited! Later today my sister and I are going to our parents place for the Christmas holidays and I just cannot wait! I want to give these yummy recipes a try as soon as possible, but I am still sick and cannot be bothered to go grocery shopping or to cook anything, so this post is probably kind of a bad idea since it is just making me even more hungry – seriously, what I wouldn’t give for one of these gorgeous meals right now! Haha not to worry though, I have lots of fruit, oatmeal and store-bought soup, so I will not be starving anytime soon, it just feels a little meh after looking...

Busted! Yes I “cheat” and buy prepped or ready-made food, here’s why

Evening lovelies! Today’s post is going to be a bit different from the usual, but it is something that I have been wanting to discuss for a while and I received a message yesterday that made me a quite angry to be honest, so here we go! ;) Yesterday I shared the above photo on my Instagram and Tumblr, it is photo of a store-bought ready-made breakfast parfait that I bought after a meeting to enjoy on the train on my way home. I was extremely hungry, but the train was so crowded that I didn’t feel like eating it until I got home (hence the extra toppings). The message I received about the photo was very impolite, angry, condescending and preachy. The woman who...

Coconut bacon – an easy to make and super tasty vegan alternative to bacon

This delicious and easy to make coconut bacon is the perfect alternative to regular bacon for those who do not eat meat or like myself only eat it very rarely. I absolutely love to use it as a crispy and flavorful topping on my soups and salads + as a substitute for the real thing in dishes that calls for bacon. The best part is that it is beyond easy to make and that you can make a big batch to store in the freezer, so you always have veggie bacon on hand! Evening lovelies ❤︎ I know what you are thinking, but nope I am not quite done with pumpkin just yet ;) This is however the last of the pumpkin recipes that I have created so far, so I think it will be a while before you see more of them on here – haha you know that I will have to start focusing on Halloween recipes now! Homemade pumpkin puree

Just like with the pumpkin spice mix I have also had trouble finding pumpkin puree here in the Danish stores, so I thought I might as well make my own as I did with the spice mix. And I am so happy that I did, it is beyond easy to make and this way it is fresh and completely free of any added nasties – actually the only ingredient is pumpkin! It does not get much better than that! My pumpkin puree is quite thick, which is perfect as I want to use it for some raw desserts, where it will be much easier to get the right texture using a thick pumpkin puree like this. If you prefer a...

Hopefully their garden and greenhouse is still full of homegrown goodies that I can steal ;) I am also going to be doing a lot of cooking since I really want my parents opinion on a couple of recipes that I have been working on, it really sucks to live alone sometimes when you are creating recipes and need feedback – haha and yes my sister lives downstairs, but she isn’t really too keen on my healthy cooking ;) I have actually served her both the...

Stop food waste // My best tips and tricks + a new app

Sponsored. This post is made in collaboration with Netto/Fødevarebanken and their new app ‘MadSkalSpises’ designed to fight food waste. Hi lovelies. I have a bit of a different post for you today, but it is a subject that is very important to me and that I hope is important to you too. Food waste is a huge problem for our planet, approximately 1/3 of the all the food that is produced goes to waste, that is more than 1.3 billion tons of food!! Food that takes up enormous resources to not only produce, but also to discard afterwards. It is taking a toll on our already struggling planet and it just absurd that we waste such huge amounts of food, when there...

Spicy tuna balls recipe + an amazing competition

Sponsored. This post is made in collaboration with John West. While you may not have been able to tell from the blog, then tuna have always been a go-to for me when I want something easy, healthy and inexpensive for lunch or dinner. My father started that tradition for me as we would always have these delicious pita breads stuffed with tuna and other goodies as our go-to easy meal when I was a kid. It is still one of my favorites and I love to add tuna to my salads or to make a healthy and quick version of tuna mousse/tuna salad to put in sandwiches as well. Those aren’t exactly the most creative recipes though, so I haven’t really found them to...

My LA food guide

After spending two whole months (October and November) in Los Angeles last year I got quite familiar with a lot of amazing places to eat and as promised I finally have my post with recommendations ready for you! I have to say that there are sooo many amazing places we didn’t try (I already have such a long list for our next visit) and we tried so many meh (as in not in any way share worthy) places as well. We didn’t have a car during our stay (none of us have drivers licenses), which meant that we often just went to restaurants and cafés that were close to where we lived or whichever area we were exploring that day. It was rare...

Friday Favorites // Something new

Hello lovelies! As some of you might have noticed I didn’t do a ‘Friday Favorites’ post last week, it wasn’t because I forgot about it, but because I felt like it was time to switch it up and come up with something new. I know I have already changed the content of my ‘Friday Favorites’ once before, but I keep evolving as a blogger and lately I have been wanting to make this more of a lifestyle blog as well. My main focus will always be on food and health, but I just think it would be fun to add a bit of a more personal touch as well. So, from now on my ‘Friday Favorites’ will be all about my...

As you might have noticed by now I really love my snacks, I am pretty much always hungry (despite having 4 meals a day) and I am therefore almost always snacking as well. One of my favorite snacks are this light and easy tropical fruit salad, you simply mix chopped mango, banana, passion fruit and raw coconut chips, so good! What is your favorite healthy snack?

Tips and tricks to staying healthy while living a busy life

“If you fail to plan, you are planning to fail!” – Benjamin Franklin This time last year was one of the most busy periods of my life and while I am fortunately not in that super stressful and time-strapped situation anymore, I would like to share some of the things that made it possible for me to keep up with my healthy lifestyle in a situation where I only had very limited time, energy and money to spend on my meals. If you keep nutritious and healthy food in the house then that is what you will eat. It is super important to take the time to go grocery shopping and fill your fridge and cupboards with healthy, nourishing food. When I am busy I prefer...

Superfood Sunday // Blueberries

Hello lovelies, as I announced last week `Superfood Sunday´ is back and so it is time for yet another post on one of my favorite superfoods – this week it will be all about blueberries! If the term superfood is new to you I would recommend reading my first post in the series, which focuses on superfoods in general – find it right here. Also make sure to check out my previous posts on chia seeds and maca. Banana pancakes with berry sauce and fresh blueberries Now, this weeks superfood does not need much of an introduction since blueberries definitely are one of the more well-known superfoods, but this does not make it any less amazing though – blueberries are by many nutritionists considered to be...

Healthy lunch box ideas pt. 2

The first post in this series of healthy lunch box ideas were one of the most popular on the blog (you can find it here!), so I thought it was about time to bring you part two as promised! I only rarely bring lunch with me, but when I do I prefer to make it the night before to save time – this lunch is perfect for that as you can easily make the salad the night before (I would recommend adding the strawberries and the dressing in the morning though) and the chocolate hazelnut “nutella” balls can be made beforehand as well – you can even make a large batch and keep them in the freezer so you’re always well prepared. Strawberry/asparagus...

I absolutely love pizza and I love to experiment with new healthified versions – like the sweet potato crust pizza I did a while ago – and now it is time for yet another alternative kind of pizza crust – broccoli crust pizza! I stumbled upon the idea on the amazing blog A Tasty Love Story and just knew I had to give it try. I really like how it turned out, so I thought I would share it with you lovelies, just a heads up though – don’t expect the crust to be super crispy, it won’t be, just try to embrace the idea of different kind of pizza :) Oh and I just have to say, I added too little toppings...

Falafel burger with spicy sweet potato fries and avocado hummus

Falafel burger patties To make the burger patties I actually used the falafel recipe I posted a while back – find it here – it...
