Raspberry smoothie bowls with ginger and zucchini

Evening lovelies! I hope you are all having an amazing weekend? ♥ Mine has actually been pretty decent so far. I mean being sick absolutely sucks, but I am such a couch potato that being able to just crash on the couch with lots of blankets, snacks and hours of Netflix is pretty much my ideal weekend ;) I really want to get better soon though, so I have been adding lots of ginger and superfoods to all my meals and drinks in the hopes that it will help speed things up. One of the things I have been making is this  beyond delicious raspberry smoothie with a hint of ginger, lots of superfoods and even zucchini, which you cannot taste, but it is such a...

Creamy green smoothie bowl with avocado and matcha

Like I have shared before, I am trying to cut a little bit down on my daily sugar intake (fruit included), which means that lately I have mainly been making green smoothies with only very little fruit or nothing at all. I of course still eat fruit (as you can tell from the toppings), to me it is an important part of a healthy diet, but I have noticed that I feel better when I eat a little less fruit (about 2-3 pieces a day, instead of 3-6) and add more healthy fats to my meals instead. This smoothie is not my favorite flavor wise (gotta be honest here), I still prefer the sweeter ones with more fruit, but it is still so delicious...

It is such an easy way to add more veggies to your meals, I have been subbing my beloved banana for cauliflower in my smoothies this week and I absolutely love it! I mean banana will always be my favorite when it comes to smoothies, but I am trying to eat a little less fruit and instead up my veggie intake a bit and this is such an easy way to do it. And let me just be clear, I...

The BEST caramel dessert smoothie – updated

Hi lovelies! So another 3 weeks have passed without a blog update, I really hoped I would have been able to get back to a more regular posting schedule by now, but sadly that will probably not happen for another two weeks. Everything has been so crazy and I am still so stressed, every time I start to feel better, then it just keeps creeping back and I feel ill all over again. It is going to take me a while to get back on track, but I am slowly getting there. I have chosen to neglect the blog a bit longer, it is more important that I get this stress thing under control, but I am super excited to get back to...

Beet’n’berry breakfast smoothie bowl

Hi lovelies! I am just stopping to share one of my new favourite smoothie ingredients with you – beetroot!! I know that some of you have probably already used this for ages while others might think it sounds horrifying to add beet to a smoothie, but trust me and give it a try, it taste amazing and it give the most gorgeous color (and don’t even get me started on the nutritional and health benefits of beets). I have actually tried the whole beetroot in smoothies thing before, but I never liked the texture when I just added chopped raw beet (maybe if I had a vitamix) and baking the beetroot like some does before blending it just seems like too much...

Pink smoothies + back in Copenhagen

Hello lovelies! Just a quick update, I am finally back home in Copenhagen after 2 amazing months in LA and a looooong trip home. I thought I would have a new recipe + a couple of other posts ready for you by now, but the truth is that I haven’t been able to do anything productive since I got home. Hopefully I will feel better tomorrow, I have some exciting posts and recipes planned that I cannot wait to share with you! Ugh and I have a ton of work that...

Neapolitan ice cream smoothie

This three layered beauty is my take on a healthified and nourishing version of the neapolitan ice-cream. It might be a healthy version, but I promise you that it is still incredibly delicious and is such a great alternative to your regular ice-cream if you want to keep it healthy – haha sometimes you just need the real deal though ;) If you use frozen bananas and strawberries + only add very little milk then you get a thicker nice cream version that you can eat with a spoon and that is even closer to the original neapolitian ice cream. Oh and since this is meant to be a bit more of dessert’ish smoothie I have added a little liquid stevia and pure...

The secretly green breakfast smoothie

As you have probably noticed I am quite fond of smoothies and I usually have one 5 out of 7 days a week. For the past two weeks I have been starting my day with a smoothie for breakfast every single day and I have been loving it so much that don’t see it changing anytime soon. It is such a perfect and nutritious start to the day and I have been feeling so energized and surprisingly full. My favorite breakfast smoothie is this “secretly green” raspberry smoothie as it is not only super tasty and filling, but also packed with good fats, fibre, protein, vitamins, minerals and antioxidants. The smoothie is full of spinach and avocado, but you can neither see it...

The “secretly” green smoothie bowl and coconut granola

It has been a while since I have posted a smoothie bowl recipe on here and you know that we can’t have that! ;) So to make up for it I bring you the recipe for a “secretly” green smoothie bowl, perfect for those who are not quite ready for green smoothies yet. This smoothie contains both spinach and avocado, but you can neither see it nor taste it because of the berries, so if you want to ease into green smoothies then this could be a good start. And as you know a smoothie bowl just isn’t the same without toppings, so I made some coconut granola to add a little extra sweetness and crunch and it turned out so good!...

Oatmeal cookie smoothie

So umm a cookie smoothie?! Yes it might sound a little strange, but since smoothies are amazing and cookies are amazing, then why wouldn’t cookie-smoothies be amazing as well? :D This smoothie taste like a healthified liquid version of oatmeal cookies, haha and before you doubt me, I promise you that it taste absolutely wonderful. It is full of nutrients, super filling and yet it taste like dessert, what’s not to like? :D Adding raw oats to smoothies are such a great way to add some extra fiber and protein, which will not only up the nutritional value, but also help you stay full for longer. If you just give the oats a quick blend before you add the rest of the ingredients then it won’t be grainy at all...

Simple strawberry smoothie bowl

“Life is really simple, but we insist on making it complicated.” – Confucius   I am the master of making life unnecessarily complicated and today is just one of those days where everything is a bit of a mess. On days like this it can be hard to find the energy for complicated recipes so I want to share this simple-as-can-be smoothie bowl recipe with you lovelies. All you need to make this are 1.5 cup frozen strawberries, 2 bananas, a little stevia and water to blend. I could not resist getting a little fancy schmancy, so I topped it with blueberries, raspberries and goji berries, but the good thing about smoothie bowls are that you can pretty much top them with whatever fruits, berries,...

Eat the rainbow // Raspberry smoothie bowl and 10 minute granola

It honestly makes me happy to look at all these fruits and colors, it is hard to be in a bad mood when you start the day like this! I must admit that I often start my days with plain oatmeal as well though, sometimes I need that extra sleep more than I need rainbows ;) Raspberry smoothie bowl Simply blend 1 banana, 1 cup raspberries, 2 tablespoons goji berries, a little acai powder (optional) and almond milk – how much depends on you blender, I only add just enough for it to...

Green smoothie bowl

Hi lovelies! I am just stopping by with a quick smoothie recipe for you – I know berry smoothie bowls have been a bit overexposed on here, so when I found this green smoothie bowl in my archives I though I would share it with you. Enjoy! Ingredients: 1-2 cups spinach 1 banana 1 cup frozen pineapple The juice of 1 lime Water to blend Toped with kiwi, pineapple, mango and passionfruit.

Energy boosting smoothie

Even though I just turned 25 I still haven’t “learned” to drink coffee and considering the fact that I am a law student I have definitely given coffee a fair amount of tries during exam season, but I just cannot get it down no matter how much milk or sugar I add! It does not really bother me though, I have instead found my own little “energy drink” to give me that extra boost when needed and it is – in my opinion – so much tastier and healthier too. The not so secret ingredient is maca; a root originating from the mountains of Peru known for its many nutritional- and health benefits – one of which is its ability to...

Tropical smoothie bowls

When I last week posted yet another version of my usual berry smoothie bowl I promised you that I would be more creative next time and guess what – I was! Kinda, haha okay maybe this is not that creative, but at least no berries were involved in the smoothie making ;) These little tropical smoothie bowls are the perfect treat in this crazy summer heat – I have been eating ice-cream pretty much non-stop, but this is a nice (and healthier) alternative. I would probably double the ingredients though, these were gone way too fast! Ingredients – yields 2 small smoothie bowls: 1 banana 1 peach A large handful frozen pineapple 1/3 cup coconut milk 1/2 – 1 teaspoon...

Strawberry/raspberry smoothie bowl

Summer in a bowl <3 Simply blend about a cup of mixed frozen strawberries and raspberries, 2 bananas, 2 tablespoons skyr/greek yoghurt, a little stevia and water. topped with melon, blueberries, kiwi, strawberries and mint leaves + chia seeds and muesli were added after the picture was taken.

Simple banana/pineapple smoothie

This banana/pineapple smoothie is as simple as can be, but sometimes simple is better and this is definitely one of my favorite smoothies at the moment – no need to overcomplicate things :) Simply blend 3 frozen bananas, a handful pineapple and water, enjoy!

The green superfood smoothie

As you probably know I am a big fan of superfoods and I love to add them to my diet whenever possible. I get a lot of questions regarding superfoods and their flavor (especially the green super foods), since the taste can be quite strong and to be honest a bit yucky a lot of you have emailed me about how to “get them down”. First off I would like to say that personally I don’t eat or drink things that I do not like the taste of – even if the health benefits are amazing – it is just not worth it. Buuut that does not mean that I think you should just give up on those super foods because there...

Smoothie bowl madness

Raspberry smoothie bowls

Smoothie bowls and fresh berries, two of my favorite things <3 I am feeling so inspired and full of ideas lately and there are so many things I would like to do with the blog, but unfortunately I have zero time for creativity until I’m done with my exams next month, so please bear with me until then! Little raspberry smoothie bowls: Simply blend 1.5 cup raspberries, 1 banana, 4 tablespoons skyr, a little stevia and water, topped with raw coconut chips, freezedried blackberry and the berries pictured.

Smoothie bowls – what, why, how?

What? A smoothie bowl is simply a smoothie that you eat from a bowl with a spoon instead of drinking it. Haha I know it is kinda obvious, but I get a lot of questions about smoothie bowls on instagram and tumblr, so I thought I might as well do a quick post on them. Why? Smoothies are so easy to make, jam-packed with nutrients and I absolutely love having my smoothies as smoothie bowls because that means I can add crazy amounts of toppings, which does not only make the smoothie that much tastier, but also add extra nutrients and helps me feel full longer. How? To make a smoothie bowl, simply make a smoothie like you usually would,...

Green smoothie time!

A little green smoothie inspiration for you this morning :) Simply blend spinach, cucumber, kiwi, pineapple, banana and water. I added a tablespoon Vitamineral Green Superfood powder, freeze dried blackberry and goji berries as well. Enjoy! :)

Ingredients: 1.5 cup frozen berries (I used blueberries and strawberries) 2 bananas 2 tablespoons acai powder (buy it here or here. Affiliate links) 2 tablespoons skyr/quark/greek youghurt water to blend Stevia or other sweetener to taste – optional Simply place everything in a blender, blend until smooth and add your favorite toppings – I topped it with kiwi, blueberries, raw coconut chips, mulberries, pomegranate, pineapple, goji berries and chia seeds. Enjoy! :)

Cashew’berry smoothie bowl

One of my absolute favorite things to eat are smoothie bowls – people always ask me if don’t get tired of eating them, but I honestly don’t because the possibilities for smoothie combos and toppings are pretty much endless. Another big plus is that they are so fast and easy to make, but still super nutritious and tasty. Recipe:1 cup frozen strawberries1/2 cup frozen raspberries1 banana1/3 cup raw cashews1/2 cup waterIf needed – a little sweetener, stevia, honey, agave etc. Just blend it until smooth, pour it into a bowl and add your toppings of choice. I used raw coconut chips, freeze dried blackberry, goji berries, chia seeds and mulberries – and I added a lot more after the picture...

Three layer berry smoothie

Happy Valentine’s Day lovelies! Here’s the recipe for my very pink three layer berry smoothie – perfect for Valentines right?   Ingredients: Frozen blackberries (or blueberries) Frozen raspberries Bananas Organic pure vanilla powder Milk Directions: The first things to keep in mind when making layered smoothies is that the bottom layer always have to be the thickest and then you gradually make the upper layers thinner (in texture) or else the upper layers will just mix with the lower layers. Now for this smoothie I do not have the exact measurements as I kept adjusting the amounts to get the colours I wanted, but here is the ingredients used for the different layers: First layer: Blend blackberries, a little raspberries,...

Simple raspberry smoothie bowl

Sometimes simple is best! Smoothie bowls and old magazines  Recipe: blended raspberries, banana and a little water topped with pomegranate, raspberries and blueberries.

Tropical green smoothie

This is the perfect “beginner” smoothie for those who are sceptical when it comes to green smoothies. The pineapple and lime masks the spinach flavour and gives the smoothie a nice tropical taste, I have yet to encounter a person who didn’t enjoy this even though they previously thought of green smoothies as something gross. Haha and once you have them hooked on green smoothies you can always start adding more green goodies like kale and maybe even some green superfoods.   Ingredients: 3 cups spinach 2 (frozen) bananas 1 cup pineapple The juice of 1 lime Water to blend I like to add 1 tbsp. Vitamineral Green or 1 tbsp. hemp proteinpowder + 1 tbsp. chia seeds, but this...

Homemade foodie gifts – updated version

Morning lovelies! Christmas is almost here and I am so excited! Later today my sister and I are going to our parents place for the Christmas holidays and I just cannot wait! I love spending time with my family and I have planned to watch Christmas movies in front of the fireplace, cuddle with the cats, bake lots of Christmas treats, go for long walks in the woods, to eat lots of good food and to just enjoy the company of my family and all of our Christmas traditions ❤︎ One of my personal Christmas traditions is to make homemade gifts for my family and friends to bring as host/hostess gifts or as extra (and more personal) christmas gifts in addition to the store-bought ones, but also...

Beet ‘n raspberry rainbow bowl

Is there a better way to start the day than with one of these colorful smoothie bowls?! I cannot be anything but in a good mood when I eat one of these and I feel so energized and full afterwards as well – definitely a favorite of mine! A while back I needed to buy beetroot dust (dried and blended beetroot) for a magazine foodie shoot I was working on, but by mistake the heath store employee gave me a jar of beet crystals instead. I didn’t work that well for the shoot (we managed though), but the crystals are absolutely perfect for adding to my smoothies and chia parfaits, I am obsessed! Not only is it super healthy and nutritious, but...

Today I want to share one of my favorite go-to breakfasts, it is healthy, beyond delicious, super easy to make and filling as well. This morning I made these colorful and delicious yoghurt bowls with my favorite super easy granola (I usually make it the night before and make a big batch for the entire week) for my little sister...

Green bliss breakfast parfait

Haha first off, please excuse my chipped nail polish, I need to get shellack or gel on them. Regular nail polish only last a day on me, the struggle of being a foodblogger ;) I made this super cute parfait for breakfast this morning and while it is quite simple I thought I would share it with you guys anyway. To make it I simply used my ‘Green bliss peanut butter smoothie’ recipe that you can find right here. The amount in the recipe is enough for 2 parfaits. I added thinly sliced kiwi berries to the jar (simply press it against the glass) before carefully pouring the smoothie in there. Then I topped the smoothie with vanilla chia pudding – you can...

No-bake brownies with peanut butter and pecans

When I first started this blog I absolutely hated peanut butter, I did not understand peoples obsession with it at all and I honestly found it downright repulsing. Haha yeah a lot has definitely changed since then! It all started with me finally trying proper peanut butter, you know the kind where there is only added peanuts and a bit of salt. The other peanut butters I had tried were full of nasties and probably only had very little actual peanuts in them, I remember them being so sticky that it almost glued my mouth together and it tasted so awful. When I finally tried proper peanut butter I started to see why some people might like it, but I was still not...

Stop food waste // My best tips and tricks + a new app

Sponsored. This post is made in collaboration with Netto/Fødevarebanken and their new app ‘MadSkalSpises’ designed to fight food waste. Hi lovelies. I have a bit of a different post for you today, but it is a subject that is very important to me and that I hope is important to you too. Food waste is a huge problem for our planet, approximately 1/3 of the all the food that is produced goes to waste, that is more than 1.3 billion tons of food!! Food that takes up enormous resources to not only produce, but also to discard afterwards. It is taking a toll on our already struggling planet and it just absurd that we waste such huge amounts of food, when there...

Treat yo self! Breakfast for champions

I think it is very important to remember to “Treat yo self!” as Tom and Donna would say (any Parks & Recreation fans out there?) and while they do it in a quite extravagant way, then there are much more simple and inexpensive ways to treat yourself once in a while. Haha I do like the way they do it though, if I hadn’t just bought a new apartment I would totally do the same! Buut I need to be all sensible and shit with my money right now (so boring) and so I am treating myself in more affordable manners and let me tell you, it definitely ain’t bad! One of my favorite splurges are fresh flowers and especially peonies! I am quite good...

I absolutely love my smoothie bowls, but I am completely obsessed with bread and I don’t have it as often, so I always feel like I spoil myself a little extra when I have breakfast like this :D To make this simply toast some wholegrain bread and drizzle one slice with acacia honey or pure maple sirup, add sliced...

Sunrise detox juice

My favorite juice at the moment is this sunrise detox juice and not just because it tastes amazing, but because I don’t need to bring out my juicer to make it – haha it is actually really easy to clean, but I’m still super lazy and hate to do it! To make this I just use my little citrus press instead to squeeze a couple of oranges and then I add in my frozen beet cubes for extra nutrients, flavor and to cool the juice – so simple, so good!

My LA food guide

After spending two whole months (October and November) in Los Angeles last year I got quite familiar with a lot of amazing places to eat and as promised I finally have my post with recommendations ready for you! I have to say that there are sooo many amazing places we didn’t try (I already have such a long list for our next visit) and we tried so many meh (as in not in any way share worthy) places as well. We didn’t have a car during our stay (none of us have drivers licenses), which meant that we often just went to restaurants and cafés that were close to where we lived or whichever area we were exploring that day. It was rare...

Quick and healthy tropical breakfast

Hi lovelies, I hope you are doing great and that your year is off to a great start ❤️ Personally I am struggling a bit with getting back into a proper routine, I have been eating too much unhealthy food and treats, I haven’t been working out and my sleep pattern is so messed up! I always let go and just enjoy myself during the Christmas holidays/New years, but then get back on track with my healthy lifestyle in January, it just haven’t been going as easily as usual this year. Haha I guess I just need to get my sh*t together and do it! I have even considered trying a juice cleanse (always been a bit skeptical of those) to really kickstart...

The 10 most popular recipes of 2015

Before we say our final farewell to 2015, then I would like to look back on the year and share the 10 most popular (aka. most viewed) recipes from 2015 with you. There are so many of my personal favourites among these and it is nice to know that you appreciate the same kinds of recipes as I do. Since I don’t drink coffee I am completely obsessed with matcha and maca for a much needed energy boost these days! I mostly just add maca to my smoothies or healthy treats and the same goes for matcha + I of course drink it as matcha tea, but I have been trying to find new ways to incorporate these energy boosting super foods into my diet and one of them are chia puddings! There are so many pros to chia puddings; they taste great, they are super healthy (see my post on chia seeds and their health benefits right here),...

Peanut butter nice cream with peanut butter granola

This peanut butter nice cream with peanut butter granola (yes my peanut butter obsession is real) is a new favorite breakfast of mine for those mornings where I want to spoil myself a little extra. Haha and let me just start by saying that I know that it is a quite sad looking nice cream I have here, I wasn’t satisfied with the first photos I took and then by the time I had taken these the nice cream was already quite melted. Maybe I should just call this a peanut butter/banana smoothie bowl instead, but either way, it tasted absolutely amazing and that’s all that matters right? :D Also, some of you have been asking me about my Q&A,...

It freaking snowed (!!) here in Copenhagen yesterday – uhm have nobody told the weather gods that it is supposed to be spring?! Friday Favorites // Lovely little things

Hello lovelies! When I last week announced that I would mix it up and change Friday Favorites to a more personal and candid type of post, then I of course had a lot of cool stuff planned that I wanted to share with you, but then I got sick and so I don’t really have that much to share from this week + I totally missed the friday deadline ;) Haha I really am the worst blogger! I did manage to take a couple of snaps for you though and just because it isn’t exactly friday anymore then I thought it would be a shame not to share them anyways. Since I always have a hard time making the friday...

Problem skin be gone // How I have been fighting breakouts and acne-prone skin

Hello lovelies, it is finally time for one of the most requested posts I have ever gotten! I have mentioned my skin problems a couple of times and since I have gotten an overwhelming amount of request from you lovelies to write more about it and especially to share what I have done to make it better, so I thought it was about time that I wrote a full post on it. As a teenager I struggled with problem skin, but I went on the pill (a special brand to deal with acne) and while I was on it I seriously had the perfect skin (hence the picture above, haha this is my goal, this is what I want to get back to...

Find the peanut butter granola recipe right here!

Peanut butter granola

I have recently discovered that I actually like peanut butter after years and years of avoiding it like the plague. The first time I tasted peanut butter it was one of those cheap junk versions with lots of added nasties (and probably not too many peanuts) and I just hated the flavor and texture, it felt like it was growing in my mouth. I still remember the experience and flavor all too well and so I didn’t eat it again for years. However, last month I decided to give it another try and this time I bought an organic one with nothing but peanuts and a little sea salt and as it turns out I actually like it!! Haha I am stupidly excited...

Quick breakfast ideas for early mornings

I have gotten quite a few requests for some quick breakfast ideas for those mornings where there isn’t quite time for pancakes or fancy smoothie bowls, so I thought I would share my go-to breakfasts for when I am in a hurry. In the pictures you see my favorite breakfast for time-strapped early mornings, I might have prettied it up for the pictures, but this breakfast bowl of skyr really is as simple as can be and you can always just use whatever toppings you have available. Skyr is an icelandic dairy product that is low in fat and high in protein, but it can be a bit hard to find outside scandinavia, so it can easily be subbed for quark, greek yoghurt or...

Raspberry rainbow bowls

Hello lovelies! I want to wish you a (very) belated Merry Christmas and a happy new year! I am sorry about the lack of posts and updates, I have been spending time with my family and I decided to completely relax and pretty much not do anything but stuff my face with lots and lots of food and treats! Furthermore I have exams in January and since I have spent way too much time on the blog, freelance jobs and some very exciting upcoming business adventures I haven’t been studying enough during the year = YIKES! I need to study 24/7 for my exams or I will be in a lot of trouble! Haha why do this always happen? I will never learn.. Anyways,...

Timekeeping // Acai bowls

“Try to imagine a life without timekeeping. You probably can’t. You know the month, the year, the day of the week. There is a clock on your wall or the dashboard of your car. You have a schedule, a calendar, a time for dinner or a movie. Yet all around you, timekeeping is ignored. Birds are not late. A dog does not check its watch. Deer do not fret over passing birthdays. Man alone measures time. Man alone chimes the hour. And, because of this, man alone suffers a paralyzing fear that no other creature endures. A fear of time running out.” – Mitch Albom, The Time Keeper Acai bowl recipe – 2 small servings: Simply blend 3 bananas, 1.5 cup...

You can change anytime you like // Rainbow bowl

“You don’t know anyone at the party, so you don’t want to go. You don’t like cottage cheese, so you haven’t eaten it in years. This is your choice, of course, but don’t kid yourself: it’s also the flinch. Your personality is not set in stone. You may think a morning coffee is the most enjoyable thing in the world, but it’s really just a habit. Thirty days without it, and you would be fine. You think you have a soul mate, but in fact you could have had any number of spouses. You would have evolved differently, but been just as happy. You can change what you want about yourself at any time. You see yourself as someone who...

Superfood Sunday // Acai

Hello lovelies, it is sunday once again which means that it is time for `Superfood Sunday´ and yet another post on one of my favorite superfoods – this week it will be all about the acai berry! If the term superfood is new to you I would recommend reading my first post in the series, which focuses on superfoods in general – find it right here. Also make sure to check out my previous posts on chia seeds, maca, blueberries, broccoli and goji berries. The acai berry is an antioxidant-rich fruit from acai palm trees in Central and South America. The berry is pronounced “ah-sigh-ee” and is small and round with a dark purple, almost black color and is often described as a mix between a blueberry and a grape. The...

Acai cashew bites with coconut and lime

Acai is one of my favorite superfoods, but I actually rarely use this antioxidant rich berry for much else than smoothies and acai bowls, so this week I have made it my mission to find new ways to put this amazing superfood to use. I have already made an acai chia pudding – find the recipe right here – and now these tasty and nourishing little acai bites. A while back I pinned this amazing recipe for raw maqui cashew lime bites by My Darling Lemon Thyme and I just knew that I had to try making my own version with acai. Ingredients: 1 cup raw cashews 2 tablespoons acai powder (buy it here or here. Affiliate links) 1/2 cup shredded coconut 2 tablespoons coconut oil,...

Pomegranate orange juice

My juicer and I have a bit of a love/hate relationship. I absolutely love fresh juice, but I hate cleaning my juicer, as in I really hate it! Because of this I actually haven’t used my juicer in a while, but when I was grocery shopping the other day and saw that pomegranates are finally back in season I just knew that I had to start juicing again. Pomegranate is one of those super healthy fruits that I really want to love, but I simply cannot stand the texture of the seeds, so instead of eating them on their own I love adding them to my smoothies and juices. Now, this is hardly a recipe since the only two ingredients are oranges and...

Delicate pink chia pudding

This delicate pink beauty combines several of my breakfast favorites: chia puddings, smoothies and parfaits, so it is safe to say that it is a new favorite combo around here – I have already made it in three different variations, but this one is my favorite so I thought I would share it with you lovelies. Like I have said before I absolutely love chia puddings because they are so tasty, super filling, easy to make and they are jam-packed with nutrients (see my post on chia seeds and their health benefits right here). Though this might seem a little complicated, it is actually super easy to make and you don’t have to add the figs, it was just an attempt to...

Friday Favorites // Berry lovin’

Strawberry/rhubarb compote – recipe here! Hello lovelies, it is time for another `Friday Favorites´ where I share some of my favorite recipes from the blog and this time it will be all about berries! As you might have noticed I am a little berry obsessed and I rarely have breakfast that does not involve those gorgeous little antioxidant bombs. I know many of you are just as berry crazy as I am, so I hope you like the recipes I have put together for you – you can find the links underneath the pictures, enjoy! I hope you will all have a wonderful, berrylicious weekend! ;) Berry smoothie bowl – recipe here! Frozen yoghurt berry bars – recipe here! Pancakes with raspberry fluff and...

Superfood Sunday // Goji berries

Hello lovelies, it is sunday once again which means that it is time for `Superfood Sunday´ and yet another post on one of my favorite superfoods – this week it will be all about goji berries! If the term superfood is new to you I would recommend reading my first post in the series, which focuses on superfoods in general – find it right here. Also make sure to check out my previous posts on chia seeds, maca, blueberries and broccoli. Pancake breakfast pizzas topped with goji berries – recipe here! Goji berries, also known as wolfberries, are red berries that origin from the Himalayan Mountains and even though the berry is quite new to the western countries, it has been known and consumed for its nutritional and medicinal benefits in China...

Words to live by

“Find joy in everything you choose to do. Every job, relationship, home… it’s your responsibility to love it, or change it.” – Chuck Palahniuk Acai smoothie bowl: 2 bananas 1 cup frozen berries 1 – 2 tablespoons acai powder (I use this one – affiliate link) 1/2 – 1 teaspoon maca powder (optional) (I use this one – affiliate link) A little almond milk to blend Toppings: superfood granola (recipe coming soon), berries, sliced banana, passion fruit, and kiwi

Happiness in a bowl

While I do like to think of myself as a glass half full kind of person I would not exactly say that I am a particular positive or happy person, I know that probably sounds awful, but to be honest I do tend to be quite moody and I definitely posses quite a bit of negativity. Lately I have however been trying to change that and it has been easier than I thought it would be. For me it has been all about finding joy and happiness in the little things in life; like getting to enjoy a beautiful, nutritious breakfast like this, buying fresh flowers, receiving a kind gesture from a stranger etc. – just noticing and appreciating all these...

Messy tropical mango parfait

This layered mess is one of my absolute favorite kinds of breakfast parfaits with a tropical taste of summer. To make this messy beauty I simply layered banana/mango/pineapple smoothie, passion fruit, plain skyr/greek yoghurt, mango chunks and then started over with more of the banana/mango/pineapple smoothie, passion fruit, skyr and then finished it off with some more mango chunks, so good! Enjoy!

Superfood Sunday // Blueberries

Hello lovelies, as I announced last week `Superfood Sunday´ is back and so it is time for yet another post on one of my favorite superfoods – this week it will be all about blueberries! If the term superfood is new to you I would recommend reading my first post in the series, which focuses on superfoods in general – find it right here. Also make sure to check out my previous posts on chia seeds and maca. Banana pancakes with berry sauce and fresh blueberries Now, this weeks superfood does not need much of an introduction since blueberries definitely are one of the more well-known superfoods, but this does not make it any less amazing though – blueberries are by many nutritionists considered to be...

Blueberry breakfast parfait

Healthy parfaits are one of my favorite things to make for breakfast since they are not only super filling and full of nutrients, but they also look and taste absolutely amazing! It almost feels like I am having dessert for breakfast – does it get much better than that?! Haha well maybe if I had actual dessert for breakfast ;) Parfaits might seem like a lot of work, but they are actually really easy to make and they usually do not take much time to prepare either. To make this blueberry breakfast parfait you simply layer blueberry smoothie (blend banana, blueberries, a little pure vanilla powder and almond milk), skyr/greek yoghurt, muesli, mixed berries (I used blueberries and strawberries), banana slices, more blueberry smoothie and some...

Superfood Sunday // Maca

Hello lovelies, it is finally time to bring back `Superfood Sunday´! Since these posts are quite time consuming I decided to take a break during exams and my summer vacay, but now they are back and the plan is to bring you guys a new post every sunday. If the term superfood is new to you I would recommend reading my first post in the series, which focuses on superfoods in general – find it right here. Also make sure to check out my post on one of my favorite super foods chia seeds! Today is going to be all about maca, which is a root originating from the mountains of Peru where it is used as not only as...

Chia pudding: 1 deciliter (about 0.4 cup) milk – I used oat milk 1 1/2 deciliter (about 0.6 cup) plain skyr/greek yoghurt 2 tablespoons chia seeds (buy them right here or here, affiliate links) 1/2 tsp. pure vanilla powder Sweetener of choice, I used liquid stevia and a little acacia honey Smoothie: 1 frozen banana 1 peach 1-2 handfulls pineapple 1/2 – 1 tsp. baobab powder – optional Chopped peach to top it with Simply mix all the ingredients for the chia pudding and let it sit in the fridge overnight or at least for a couple of hours to allow the chia seeds to soak up the liquid and let the mixture thicken. You might need to stir it a couple of times while...

Berry vanilla chia jam

I cannot recommend this chia jam recipe enough, it only takes 5 minutes to make (needs a couple hours in the fridge though), it is super healthy and it is so tasty and versatile – I love to add it to pretty much everything! You can use whatever berries you like and have available, this time I made it with homegrown black currants, red currants and blueberries from my parents garden and it turned out so good – sweet and with a subtle taste of vanilla, but still a little sour as well. Ingredients: 150 g. berries – I used a mix of red and black currants and blueberries 1 dl water 3 tbsp. chia seeds (buy it right here or here, affiliate links) 1...

Layered chia breakfast pudding with vanilla and berry flavor

I made this chia pudding for the first time last week and I think my smoothie bowls will have some serious competition in the future, because this might be my new favorite breakfast! There are so many pros to these chia puddings; they taste great, they are healthy (see my post on chia seeds and their health benefits right here), filling, super easy to make and the best part is that you can make them the night before to save time! Ingredients – 2 small servings as pictured: 4 tbsp chia seeds 2 dl milk 3 dl skyr/greek yoghurt 1/2 – 1 teaspoon pure vanilla powder Sweetener of choice – e.g. stevia, honey, agave 4 dl berries – I used 1 dl strawberries, 1...

Instagram tips and advice pt. 1. // Photography and content

Now, I am in no way an instagram expert, but I am an avid user of the social media and have been so for the past two years all the while I have managed to establish quite a successful account with more than 56.000 followers and counting. I have learned and improved at lot over the past two years and since many of you email me about how to take good pictures, how to gain followers etc. I thought I would share my tips and advice with you in a blog post. When I started writing this post I realized that I have quite a bit to share on this subject so I have decided to divide this post into two...

#GIRLBOSS

Is there anything better than warm summer days spent in the sun while reading a good book and eating freshly picked, homegrown berries? I am currently reading Sophia Amoruso’s book #Girlboss and I can definitely recommend it to my fellow girl bosses out there – the book is super inspirational and motivational, haha I can hardly finish it because I just want to get out there and get sh*t done already! I am about halfway through and I have already (mentally) started two business and there is a third on its way, haha so if you are an aspiring girl boss like myself, this is definitely that extra motivation you need to believe in yourself and get started! Now, while reading...

Homemade peach/raspberry ice tea

The weather here in Denmark has been absolutely amazing these past few weeks, which has inspired this summery peach/raspberry ice tea. It is important to stay hydrated in the summer heat and the best thing you can do is to drink lots and lots of water, but admittedly it can get a bit boring at times so I love to switch it up with smoothies, freshly pressed juices and now homemade ice tea! Ingredients: 750 ml water 3 tea bags 3 peaches ½ cup raspberries 3 tablespoons akacie honey or agave sirup a little liquid stevia (optional) Inspired by Damn Delicious Directions: Boil the water and let the tea bags draw for about 5 minutes or the recommended brewing time...

Messy raspberry parfait

Plain skyr/greek yoghurt Banana slices Honeay toasted muesli, dried white mulberries and freeze dried blackberries

Instagram recommendation // Loni Jane

I absolutely love instagram and it is such a huge source of inspiration to me – instagram and some of the amazing people I follow on there is actually the reason I decided to change my lifestyle. It was also what inspired me to start my own instagram dedicated to my journey into healthy living, which eventually lead to the start of this blog. I have decided to start sharing my favourite instagram accounts to share the love and share the inspiration. The first instagram account I would like to introduce you to is @lonijane – Loni is vegan and follow the 801010 diet, which means lots and lots of (very colourful and photogenic) raw fruit and veggies. She is the...

My kind of luxury // Acai bowls

Acai smoothie bowls with fresh fruit are my little everyday luxury – both a treat to the eye and an investment in my health! I always feel so energized after eating one of these and the fruit and their pretty colors makes me happy, haha kinda silly I know! But I really do feel my mood improve just by looking at these pictures. Drastically upping my fruit (and veggie) intake is truly one of the best things I have done for my health and well being. Acai smoothie bowl: 1 banana 1.5 cup frozen berries (I used raspberries and blueberries) 3 tablespoons skyr/greek yoghurt 2 tablespoons acai powder (buy it here or here. Affiliate links) A little stevia or acacia honey to taste Water...

Eat the rainbow

There is nothing better than lots of fresh fruit for breakfast <3 Acai smoothie bowl: Simply blend 1 cup frozen berries, 1 banana, 5 tablespoons skyr/greek yoghurt, 1-2 tablespoons acai powder, a little stevia or acacia honey and water. I topped it with strawberries, pineapple, kiwi, blueberries, raw coconut chips, grapes, chia seeds and muesli.

Raspberry breakfast parfait

As you might have noticed I absolutely love making healthy versions of parfaits! They’re so tasty, surprisingly filling and the flavor combinations are pretty much endless. I love making them for breakfast when I have a little extra time in the morning, but also as a snack or as a healthy dessert. If you click on “Category” at the top of the blog you will see that I have dedicated a whole section to parfaits, so have a look if you want some more inspiration for different flavors and combinations. Raspberry breakfast parfait Skyr/greek yoghurt Raspberry smoothie: blend frozen raspberries, banana, pure vanilla powder and skyr/greek yoghurt Honey roasted muesli Topped with blueberries and raspberries

Superfood Sunday // Chia seeds

Hi lovelies, are you ready for Superfood Sunday? In case you didn’t see this post last Sunday, ‘Superfood Sunday’ is a new category on the blog where I each Sunday will introduce you to one of my favorite superfoods, write about its benefits, share recipes using the particular superfood and so much more. Last Sunday I wrote a post on superfoods in general so if you are new to the term I would recommend you read that post first :) Todays Superfood Sunday will be all about chia seeds – one of my absolute favorite superfoods! Add chia seeds to your smoothies and smoothie bowls – recipes here, here and here! Now, what exactly are chia seeds? Chia are small edible seeds...

Rainbow breakfast bowl

Acai smoothie bowls will always be one of my favorite thing to have for breakfast; they’re easy to make, as nutritious as can be and super tasty! Simply blend 2 bananas, 1-2 cups frozen berries, 3 tablespoons skyr or greek yoghurt, 2 tablespoons acai powder, water and a little stevia (or honey/agave). I topped it with strawberries, pineapple, kiwi, blueberries, almonds, mulberries, chia seeds (I will do a post on them tomorrow for ‘Superfood sundays’) and raw coconut chips, so good!

The best kind of mornings

My little sister came to stay with me for a couple of days in the beginning of last week, so on tuesday I decided to skip class, sleep in and make a nice breakfast for us to eat under snuggly blankets while watching our favorite TV shows. I made chocolate pancakes, strawberry/banana/vanilla smoothies and a fruit platter. I love lazy mornings like that < 3 Pancakes: I used the same pancake recipe that I already posted here (click) and then just added some chopped dark chocolate to the pancake batter. Chocolate sauce: My sister was getting a bit impatient (haha, sorry Laui) so instead of making my own I just melted some store bought dark chocolate,  but let me share a recipe...

It is done when it has a light golden colour and the mixture...

Raw raspberry chia jam

This is hardly a recipe as chia jam is so easy to make and only requires a few ingredients, but I will share it anyway for inspiration – a couple of months ago I had never thought of using chia seeds to make my own healthy jam and there might be others out there who hasn’t thought of it either, so here we go! :) You can use whatever berries you have available, this time I choose to use raspberries and it turned out so good – sweet, but still a little sour as well.  I like to use my chia jam as regular jam on bread, as a layer in parfaits, I add it to my smoothies for extra...
